We have a huge garden and are getting a TON of veggies. I was hoping to make something almost entirly out of the food from the garden to treat all our friend who helped up. I’ve done salad before but what thinking a big pot of Veggie-Beef Soup. (My husband and friends are also hunters, so I have tons of Deer meat) I wanted to use Deer Stew Meat and alot of our Vegetables. What better then eating a meal you grew all the food for? So I’ve been looking at alot of recipes but was hoping for something to make it my own. Any suggestions?

  5. Here is a recipe for Deer Meat Vegetable Soup:

    2 Tablespoons vegetable oil

    2 pounds venison stew meat

    1 cup finely chopped onion

    2 cloves garlic, minced

    1 Tablespoon Worcestershire sauce

    1 bay leaf

    ½ teaspoon dried oregano leaves

    2 teaspoons salt

    ½ teaspoon black pepper

    5 cups water

    4 cups diced potatoes (about 8 potatoes)

    2 ½ cups diced carrots (about 1 lb.)

    1 cup green beans

    ½ c dry white rice

    46 ounce can tomato juice

    In a large pot, brown the meat in the oil. When the meat is almost brown, add onions and garlic. Then add Worcestershire sauce, oregano, salt, pepper, bay leaf, and water. Simmer, covered, for about 2 hours. Remove the bay leaf. Add potatoes, carrots, green beans, rice, and tomato juice. Cook about 45 more minutes, or until the vegetables are tender.

    Of course, the great thing about vegetable soup is the versatility of it. You can use less meat or more veggies. You can use peas or lima beans instead of green beans. You can also add corn or other vegetables that you like. Sometimes I even add leftover mashed potatoes to vegetable soup. Omit or alter the amounts of spices to suit your taste, and adjust the water to make the amount of broth you want. It is all about what you like and using your own creative flair!

    To go along with this soup, my family enjoys these corn griddle cakes:

    2 cups self-rising cornmeal mix

    1 egg, lightly beaten
