What is a salad or a side dish that you have made that you think EVERYONE should try?!
Im looking for something new that I’ve never tried!
Please no fish or pork.

Sweet Potato Casserole
5 large sweet potatoes
1/2 pound (2 sticks) butter or margarine
1/2 c brown sugar
miniature marshmallows (optional)
Wash sweet potatoes, place on cookie sheet and bake at 350 degrees until soft to the touch (about 1 hour). Cool, then peel potatoes. Slice potatoes about 1/4″ thick and layer in casserole dish alternately potato slices, butter and sugar. Bake covered in 350 degree oven for 15 minutes. If desired top with marshmallows and return to oven until marshmallows begin to melt.
Rice and Corn Casserole
1 stick butter or margarine
1 large onion, chopped
1 large bell pepper, chopped
2 cans cream style corn
1 c cheddar cheese, grated
2 c instant rice, uncooked
Melt butter in casserole dish. Add corn, rice, bell pepper, onion, salt and pepper to taste. Mix all together. Cover with grated cheese. Bake at 350 degrees for 30 minutes.
Mexican Rice
1/4 c bacon grease
1/2 c onion, chopped
1/2 green pepper, chopped
2 c minute rice
2 c hot water
2 8-ounce cans tomato sauce
1 jalapeno pepper, chopped
salt and pepper to taste
Saute onion, pepper and Minute rice in bacon grease until golden, stirring constantly. Add remaining ingredients. Bring to boil and simmer for 5 minutes or until rice is tender. serves 6-8
Pineapple Salad
1 can chunk pineapple #2 1/2 can
2 eggs
3/4 c sugar
2T flour (rounded)
1 t vanilla
1/2 c chopped nuts
1/2 small pkg miniature marshmallows
Drain pineapple, mix juice, beaten eggs, sugar, and flour and cook until thick. Cool. Add pineapple, chopped nuts and small marshmallows.

Seafoam Lime Mold Salad
13 ounce package lime jello
21 cup boiling water
3½ cup cold water
41 Tbls lemon juice
51 8 ounce package cream cheese
61 ½ cups miniature marshmallows
713 ½ ounce can crushed pineapple
8½ cup chopped nuts (optional)
Dissolve lime gelatin in boiling water, add cold water and lemon juice.
Gradually add to softened cream cheese, mixing until well blended. Chill until almost firm, fold in marshmallows, pineapple and nuts. Pour into a 1 quart mold, chill until firm.
Note: If you don’t want to put it into a mold just use a nice glass bowl.
