Question by mj_puce: How can I make a good pasta sauce without tomato or cream sauce or pesto?
Do you have any good recipies or tips for alternative pasta sauce? What would you use as the base? I am vegetarian so it should not have meat. I try to come up with new sauces but they don’t come out right. For example, my carrot sauce was too dry, and my bean sauce was really tasty but looked like a cowpie. Please help!!

i’ve never made it, but a friend of mine used to make a pasta sauce out of squash that was quite tasty. you can try recipesource.com to try to find some recipes

You are one of the first people that I heard say “tomato” like that!
First!
My mother makes this amazing pasta sauce that is basically a more liquidy spinach artichoke dip. The artichokes keep it really creamy and moist without using any mayonnaise or butter. She uses the canned artichokes and just blends them down to a liquid and then cooks it a little to get some of the water out. Then she seasons it with whatever she wants.
Try a peanut butter sauce for a change.
1/4 c peanut butter (natural, no sugar added kind)
2 t soy sauce
1 T brown sugar
1 T fresh lemon or lime juice
1/4 c coconut milk (lite is fine, if you prefer or substitute water)
1/4 c water
red chili flake to taste
chili garlic sauce to taste or 1 clove crushed garlic
Optional:
sesame oil
curry paste
grated ginger
shallots sauteed till brown in oil
Combine all ingredients with a whisk in a small bowl, adding the water last. Pour into a small saucepan and heat over medium heat until sauce begins to bubble and thicken. Experiment with this sauce adding a teaspoon at a time of one the optional additions and tasting as you go. Serve hot or cold.
You can also make a nice sauce with avocados.)
You should go to foodnetwork.com. I have seen Giada Delaurentis make pasta sauce from butternut squash, and also from peas and cream cheese. If you have trouble with sauces being too dry, you can reserve some of your pasta water and add that to your sauce, that works pretty well. One pasta I love:
1 pint cherry tomatoes halved
1 bunch fresh basil
1 fresh mozzerella ball cut into small pieces
3 cloves garlic
olive oil
butter
You put some olive oil and butter in a skillet and add the garlic. Then add the tomatoes and squish the seeds out into the sauce. Add salt and pepper, cook until tomatoes are soft then add the basil. Pour over your favorite pasta and add mozzerella over the top.
It’s tasty!!
Yum.. you could have: spinach with cheese sauce, oil and very finely chopped ginger with veges.
