  1. I’m not sure I quite understand what your asking, but here could be some substitutes for the items you listed.
    mint – basil
    milk – cream, evaporated milk
vinegar – citrus juice-lemon, orange, lime
onion – shallot, green onion, red onion, garlic
almonds-toasted walnut, pecan, hazlenut, pine nut
    leeks – anise seeds
    cucumber-zucchini, squash

    Hope these help.

  2. I have some ideas for a few of them
    mint – lemon zest
    milk – cream
    cherry tomatoes – tomatillos
    onion – scallions
    cumuber – zucchini

  3. milk-water
    cherry tomatoes-whole ones diced
    vinegar-lemon juice
    kidney beans-romano beans
    onion-onion juice
    almonds-walnuts
    leeks-onions
    cucumber-zucchini
I don’t know what a cubenella pepper is but I guess any pepper would do
I don’t know a substitue for mint. If you are baking, peppermint flavouring would do
Hope this helps you somewhat anyway.
