Question by Leslie D: I’m hosting a tapas party. Can you offer any menu suggestions?
Here’s what I’ve got so far: fried Marcona almonds; marinated olives; fried chorizo-stuffed mushrooms; small garlic toasts with Serrano ham, tomato and Manchego; the same garlic toasts with creamy paprika spread and shrimp; a tuna, egg and tomato salad; and lots of fresh fruit for dessert. I’ve never done a tapas meal before. If you have–am I missing anything essential? I’m looking in particular for things that can be done ahead, since it’s going to be hot tomorrow and I don’t want to be slaving over the stove at the last minute. I’d be grateful for your ideas!

How about marinated chick peas?
Take a can of chick peas, drain them. Place in a bowl, add olive oil, vinegar, garlic (minced or a dash or garlic powder), salt, pepper, maybe a dash or hot sauce.
Mix well. Let stand in the fridge overnight or for a few hours. Serve with toothpicks.
Cold, easy, refreshing. A nice contrast to the other things you’re serving.
Don’t forget the sangria, wine, and soft drinks.
What a wonderful selection–it doesn’t look like you have missed anything–especially since tapas are much like appetizers, small portions of different kinds of foods. You might want to consider a small vegetable or goose liver pate’ that can be spread on crisp breads–it can be purchased in advance. Small pieces of honeydew melon wrapped in prosciutto are also good.
Had you thought of mojitas, sangria or margaritas to go with them? These can all be mixed in advance in pitchers and then served when your guests arrive.

I once had some roquefort cheese stuffed dates wrapped in bacon at a tapas restaurant… they were sooooo good! I have made them at home and are super easy…. just buy the pitted dates stuff them with some roquefort or blue cheese, wrap half a piece of bacon around and secure with a toothpick, bake until bacon is crispy. But it sounds like you have a fantastic menu already!
