If so does anyone have anyone suggestions on which seasonings to use? If I use cream of mushroom I shouldn’t use red wine or tomatoes right?

Yes, it’s fine to marinate your short ribs overnight. I’m posting our favorite recipe for beef short ribs. We’ve been using this recipe since the 50s or 60s and love it! Sometimes, I make a double recipe of the sauce to make sure I have plenty – especially if I’m baking them indoors instead of grilling them.
You can tell the recipe is old since it reads catsup instead of ketchup!
ROCKY MOUNTAIN BEEF RIBS
In a small saucepan, combine 1 cup catsup, 1 cup water, 1/4 cup red wine or wine vinegar, 1/4 cup diced onion, 1 tsp. minced garlic, 1 Tbs. brown sugar, 2 Tbs. Honey, 1 tsp. dry mustard and 1 tsp. chili powder. Simmer for 20 minutes. Cool.
Meanwhile, sprinkle 3 lbs. boneless beef short ribs with Accent. Pierce meat. Set ribs in single layer in baking pan and pour cooled barbecue sauce over them. Cover and refrigerate overnight, occasionally turning ribs.
Bake at 375° for 1 to 1 1/2 hours turning once. Or grill over medium heat and baste frequently.
