Question by RedBabe: What should I do with all my fresh tomatoes?
I have all these garden fresh tomatoes and will be making sauce later today. But I want some really different recipes and ideas for my tomatoes. Not the regular basil and olive oil or Italian type mozzerella and basil and tomato recipe. What do you do with your tomatoes?

    Amatriciana Sauce. We have replaced our much fattier Carbonara sauce with
    it, and my husband actually prefers it. Thanks for sharing.

    tomato salad
    tomato with rice (or tomato risotto)
    pizza with lots of tomato slices on top

    Preheat your oven to 200°F. Start with 5 pounds of tomatoes, either plum, or beefsteak, or yellow, or even cherry tomatoes or juliettes. Cut the tomatoes in half end-to-end, and place cut side up on a rimmed sheet pan. Chop 4 cloves of garlic, and sprinkle over the tomatoes. Strip several sprigs of fresh thyme, and sprinkle the leaves over the tomatoes. Season with coarse sea salt and fresh ground black pepper. Drizzle extra-virgin olive oil liberally over all of the tomatoes; you’ll want to save the oil for use in your cooking. Place in the oven for 10-12 hours*; the tomatoes will collapse, but not completely dry out. Pack into small ziploc bags or a freezeable container, and pour the oil from the pan over the top. (*Note: smaller tomatoes will take much less time, so check after 4-5 hours.) Can be frozen for up to one year.

    These can be stored in the refrigerator for a couple of weeks (if covered with oil in the jar), or in the freezer for an entire winter. Slow-roasted tomatoes give you a taste of summer in hummus, soup, pasta, risotto, proscuitto, fontina and spinach panini, or a red onion and arugula tart.

  19. My mom makes thunder cake. It calls for 1/3 cup of tomatoes, but you can add more if you want. The best part about the cake is that you don’t even taste the tomatoes!

  21. I would say something to try is definitely your own tomato ketchup! i saw jamie oliver make his own on his tv show and have always wanted to try it but never grown my own tomatoes and feel it would be best to use fresh tomatoes youve grown yourself =)

    If you know how to can it, you can do that, or just make a fresh salsa.

    Tomato soup with grilled cheese.

    Bruchetta: tomato with finely chopped red onion, fresh basil a bit of olive oil and balsamic vinegar on top of toasted french bread rubbed with a garlic clove. Simple and tasty.

    Homemade pizza: margherita: fresh tomato, fresh buffalo mozzarella and fresh basil.

  24. I like to cut an inch thick slab of tomato & eat it on bread with mayo.

  25. 1) chop the tomato in small pcs..Small it little, add olive oil, salt,black pepper..chopped garlic, green CHILI(optional)..mix well..it is good side dish..

    2) cut the tomato in 4 pcs each..may be 8 tomato…in a pan add oil, add black cumin(Nigel) 1/4 tsp, and add 1/2 tsp ginger mice, 1 stem of curry leaves and saute for 30 sec..and add chopped tomato, add salt, a pinch turmeric..and saute and cover till tomato are tender(saute in between 3min)…and then add sugar(as sweet u need)..and saute…store it i the freeze for 3 days..

    3) use it in the salad…

    4) store in can for further use when not in the season…

    What you need.

    Big tomatoes cut in big halves

    1/2 teaspoon of vinegar
    1/2 teaspoon of olive oil.
    Top it of with basil and onions
