Question by Tara: I’m looking for a Chicken Salad Recipe that’s a crowd pleaser?
I don’t enjoy bland food, and I’ve found that a lot of traditional Chicken Salad recipes fall short in regard to flavor. I’m looking for something zesty, but I’ll settle for something new with strong bold flavor that tickles my tastebuds.

I’ve never had any complaints about this recipe
1 pound chicken breast meat, cooked, skinned, boned and diced
1/2 cup diced celery
1 cup green grapes, halved
1 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sugar
1/2 teaspoon onion powder
1/4 cup toasted almonds
1 tablespoon lemon juice
1 cup crushed pineapple, well drained
Place chicken in large mixing bowl; add celery and mix. Add remaining ingredients and mix with rubber spatula.

This has huge flavor…it’s a spin on a BLT (bacon, lettuce and tomato), but rather than putting it on bread, you serve it with big, home made croutons….(As for the basil mayo, just put a big handful of fresh basil in a food processor with the 1/2 cup of mayo)…
*** Chicken “Club” Salad ***
3 cups 3/4-inch cubes of Italian bread (preferably whole wheat)
3 tablespoons olive oil
6 slices of lean bacon, chopped
3 pounds chicken breasts, poached (procedure above), skin and bones discarded, and the meat cut into bite-size pieces (about 4 cups)
1 pint cherry tomatoes, quartered
4 scallions, including the green part, minced
1/2 cup quick basil mayonnaise (recipe follows)
Basil sprigs for garnish if desired
In a bowl drizzle the bread cubes with the oil, tossing them to coat them evenly, and season them with salt. Spread the bread cubes in a jelly-roll pan, toast them in the middle of a preheated 350 degree oven for 15 to 20 minutes, or until they are golden, and let them cool. In a skillet cook the bacon over the moderate heat, stirring, until it is crisp and transfer it with a slotted spoon to paper towels to drain. In a large bowl combine well the chicken, the tomatoes, the scallions, two thirds of the bacon, the mayonnaise, and salt and pepper to taste, divide the salad among 6 plates, and arrange the croutons around it. Garnish each serving with some of the remaining bacon and a basil sprig.
3 cans chicken
3 chopped celery
3 diced green onions
2 chopped cucumbers
1 lg. chopped avocados
1 lg. chopped tomato
1 lb. Velveeta cheese
1 can diced Rotel tomatoes

Toss all the ingredients together. Mix 1 pound Velveeta cheese over double boiler; add 1 can diced Rotel tomatoes and mix well. Crumble handful of Fritos over each individual serving of salad and top with hot Rotel cheese.
OOO, OO, OOO!!! You can make this Curried Seafood salad with chicken instead. It is yummy! Not sure if this is what you are thinking about, but offering it in case?
Curried Seafood Salad
1 head lettuce (Bib lettuce + another works well too)
4 stalks celery, chopped
4 green onions, chopped
½ pound cooked medium shrimp (shells removed)
½ pound cooked crabmeat (I prefer King Crab)
Curried dressing (instructions follow):
2 tablespoons fruit Chutney (mango or peach are good)
1 cup mayonnaise
2 tablespoons tarragon vinegar
2 tablespoons vegetable oil
2 teaspoons curry powder
3 to 4 tablespoons half-and-half
Condiments, such as toasted coconut, toasted slivered almonds, chopped green onions, raisins & Chutney
Prepare condiments & set aside. Prepare curried dressing & set aside.
Tear lettuce into bite-size pieces & place in a salad bowl. Add celery & green onions. Stir in shrimp & crabmeat, reserving some pieces for garnish. Toss with Curried Dressing (note, you will probably NOT need all of the dressing.) Garnish with seafood. Serve condiments in separate bowls.
Curried Dressing:
Mix all ingredients in a blender or food processor fitted with the metal blade. Taste for seasoning. The curry flavor should just bite or it flavor will be lost in the salad.
Variation: Substitute 1 pound boneless cooked chicken for the seafood.
You could certainly adjust it to be a sandwich kind of salad. I would serve it on croissants or pita. Just chop the chicken more & add the dressing slowly until you get the consistancy you are looking for.

you can grill the chicken and cut them into pieces, then get romaine salad
shred up carrots, cut up tomatoes, and cucumbers
the best dressing for chicken salad that gives it an exciting flavor would be sesame (oil?) dressing. you can get that at costco or sam’s club, but i’m sure they sell it elsewhere. and top it off with some of those wonton croutons
