Question by Mrs: making tomato soup can i use fromage frais as alternative to cream ?
i want to make a tomato soup virtually fat free so i dont want to add cream, also creme fraiche is quite high in fat (even the reduced fat ones) so i dont want to use that either, so was wondering if i could use fromage frais has anyone used it?

Don’t waste the wonderful flavour and texture of the fromage frais except to add as the last thing before it goes in the bowl on top of the soup as a garnish with a bit of snipped chives or garlic scapes. If you stir it in it will clump and look awful.
My favourite way to use fromage frais is to put it on top of small wedges of watermelon with some finely chopped mint – like a small cold salad. mmmmmmm
