Oven-dried tomatoes

We’re oven-drying small tomatoes with garlic, salt, and olive oil. Use them on pasta or just for snacking.

Question by Bird Guy: How do I get seeds from a tomato?
I just grew tomatoes for the first time this year. I want to use the seeds from the inside the tomatoes to start a garden next year. Is there anyting special i need to do to them?

Take them out of the tomato. Put them on a paper towel to dry. After about a week they should be dry. If they are, gently pick them off the paper towel and put them in a paper envelope to save for spring. Keep the envelope in a cool, dry place.

  1. Yup. You want the oven temperature no more than 200 degrees F. The tomatoes
    take a long time to dry – smaller ones may take 2.5 to 3 hours. Tom

  2. Hi! Once cooked, how long do they keep for? Do they have to be refrigerated
    or can they be kept at room temperature? Thanks!

  3. Do refrigerate or freeze. I don’t dry them completely, so they’re not
    suitable for keeping at room temperature. Typically I freeze them in
    quantities suitable for adding to pasta dishes.

  5. Nothing special, just dry them and save them. we found out the wrong way how resilient they are. Are compost pile didn’t get hot enough and this year we had tomatoes popping up everywhere. Even where tomatoes had fallen on the ground outside the garden. You may have more than you plant next year. Good luck.
