Question by Ron Brgundy: Can you give me some ideas for getting vegetables in my diet?
I am not a vegetable person at all. I am drinking tomato juice which I like, but just read the label and it has a lot of salt in it. How do you get your vegetables on a weekly or day to day basis?

  1. I never used to be crazy about veggies either. I still hate eating salad unless it’s loaded with cheese and meat and nuts and such. But I found a way to get myself to like them was to do what you do with kids to fool them; put the veggies in the food. Put cauliflower in your mac and cheese, for example.

  2. V8 vegetable drink, 6 oz. low salt, twice a day.

  3. I like to take olive oil and heat it in a saute pan on low heat. Throw a clam shell of spinach into it with a little salt, pepper, and minced garlic. Saute for a little and there you go, probably one of my favorite sides at dinner.

  4. Get the low salt version of the juice. Make soup, pot pie and other casserole that have lots of veggies in them….and add extra. I have no trouble because I LOVE veggies.

  6. The best way to get vegetables in your diet would probably be to just eat vegetables. Soups can be good for getting vegetables in, as well as spaghetti sauce, if you don’t want to have to eat them plain. A lot of asian foods have sauces that can conceal the flavor as well, but if you really hate the taste of vegetables, you probably still won’t be too fond of most of them. There’s also low-sodium v8 that you can buy, though I’ll admit that it doesn’t taste as good as the original.

  7. Salads, Wraps (so like get a spinach or whole wheat wrap, put in cucumber, lettuce, cheese, green peppers, some hummus), stir fry. Bagels like the wrap work as well, try a multigrain. Snack on veggies with dip. As for the tomato juice, have you ever heard of a place called Freshly Squeezed? Because they actually make the stuff, no salt added, in front of you. They have the fresh veggies right up there, and you can make any combination, they put it through a machine and it makes it into liquid form. I’ve had people say it tastes better than V8, so definetly worth a try! Check your local smoothie place to see if they do that, and in bulk (freshly squeezed will give you two litres to take home if you’d like). You could always think about getting your own machine too. Hmm, another way would be through something called “fruit source bars” they have a mix of veggies and fruit.. its a little over a hundred for salt intake,so you’d want to not have them constantly. Low salt tomato juice can work. Also just try adding them into whatever you eat, like add lots of veggies on a burger or if you’re eating like a meat potato veggie meal, maybe use some spices to make it taste better (so you’ll want to eat it more). Sometimes veggie sauce can help as well, though spike is pretty good for seasoning, and you can get low salt version of those. Definetly awesome you’re trying to get more veggies into your diet, and sounds like you’re doing awesome! Best of luck!! x

  8. Are you just trying to add vegetables to your diet, or is there a specific reason?

    Either way, I absolutely loathe vegetables, but I eat more than most people do on a daily basis. Here’s what I personally have done(I actually had to because of certain health problems…):

    Wake up, drink water, exercise a bit, and eat some broccoli and spinach. Just a bit of each will be plenty. Then for lunch, throw some carrots in there and a bananna. For dinner, get some green onions in there.

    Throw a salad in one of those meals and you’ll be good to go!

    Honestly, nobody likes to eat their vegetables, but it’s just something that you’ll have to do, especially if you want to live a long and healthy life. It’s only hard at first. After, say, 2 weeks, you’ll be doing great!

    I personally used to only eat pizza, now my favorite food is caesar salad. I know, quite a turn around, haha. Heck, you might even learn to love vegetables, as I did. I was a vegetarian for around 2 years(Now I’m a plexitarian for certain reasons), and I don’t regret it one bit.

    It’s not hard to get vegetables in your day, unless you make it that way. If you go eat fast food for every meal, chances are, your healthy, life-giving vegetables are going to be left out of the equation, so try to cook at home more, and remember to stick to it!

  9. It’s well known that the MINIMUM servings of fruit and vege is 5. Google “5+ a day” campaigns for more info on that. It’s certainly hard to break the habits of a lifetime but our health literally depends on it!!
    I suggest you select say 3 or 4 freshly available veges in your region and then use Google to find delicious way to prepare.
    … examples might be
    cauliflower in a curry sauce, on rice.
    carrot cooked then add orange juice
    add brocoli or cauliflower to pizza. (this was the only way one kid would eat any vege)
    Fresh peas cooked with fresh mint leaf.

  10. – Consume pastas with tomatoe sauce (1/2 cup of tomatoe sauce ~ 1 serving vegetables)
    – Dice up vegetables (carrots, peppers, onions, etc..) and put them into dishes- meatloaf, sauces, etc..
    – Side salads (dressing of choice- add chicken, cheese, nut’s, etc..)
    – Yams/ Potaoes- cut up& roasted, steamed, or baked
    – Canned corn/ peas
    – Steamed spinach
    – Sandwhiches with lettuce, onion, tomatoe, cucomber &/ or pepper condiments
    – Crunchy vegetables with ranch/ hummus
    – Omelets with diced vegetables
    – Steamed mixed vegetables (with margerine/ olive oil/ herbs or cheese)
    – Grilled vegetables
    – Sauteed vegetables
    – Vegetables in stirfrys
    – Etc..

  11. Getting more veggies into your diet takes some effort on your part, but it’s VERY worth it!

    First, stop telling yourself that you are “not a vegetable person at all”. Then ask yourself WHY you don’t like vegetables. For me, it was the result of early childhood trauma (ha ha) caused by a wonderful mom who thought that the only way to prepare vegetables was to boil them until they were way past dead. Put them in your mouth and they instantly turn to baby food mush. Ick.

    Then there is the idea that vegetables are only healthy if they are steamed and served with no added fat or salt. With all due respect, YUCK. Nothing is as tasteless or boring as a pile of steamed veggies with no pizzaz. You gotta put some soul into it!

    First, take the time to get quality produce. If there is a farmer’s market in your town, try it out. Learn what vegetables are in season at different times of the year. Talk to the farmers – they’ll give you great ideas for cookin’ up their produce!

    And don’t start with that “I don’t like to cook” stuff. Learn to cook a few vegetables – it won’t kill you, I promise! Cook vegetables lightly (steam or saute) so that they have some crunch and texture. Then add some flavor! Try:

    Broccoli steamed with a little butter, salt and lemon zest

    FRESH (not canned – yuck) green beans quickly sauteed in a little olive oil and garlic. Add some hot chili oil if you like it spicy – yum!

    Asparagus broiled with a little olive oil, parmasean cheese, and a sprinkle of salt and pepper – my all time favorite!

    Cauliflower baked in a gratin (cheese). Let’s face it, cheese improves EVERYTHING

    Just about any vegetable sauteed with olive oil, garlic, and soy sauce

    Find a sauce (buy it or make it) to drizzle over your vegetables. My favorite right now is a spicy peanut sauce I make myself. Jasmine rice, a huge pile of steamed kale, and peanut sauce is my dinner several nights a week.

    Find a good vegetarian restaurant in your town and try it out. You’ll find things you like, no lie

  12. some decent answers above…another option you can try (I hate vegetables as well) is get a juicer. You can get a good quality one and juice your veggies. That way you are still getting all of the nutrients, no additives, and still taste decent (as good as tomato juice/V8)
