Question by dylan: How can i make green peppers sweeter?
im wanting to put a green pepper into a tomato pasta sauce tonight but ive always been told that they are too bitter. any way to sweeten them?

Tomato & Rucola Pasta

A very simple pasta dish.

– 1 onion
– 4 tomatoes
– 2 cloves of garlic
– 1 pot of rucola
– pepper & salt

First fry the chopped onions golden in some oil, and then add the sliced and washed tomatoes. After the tomatoes look good add spices and rucola and serve with pasta. Simple, fresh and tasty.

  1. The reason why they raste bitter is that they haven’t been cooked properly, that natural sugars in the pepper need to caramelise to bring out the sweetness. In a pan add a dash of olive oil with some finely chopped onions and fry over a low heat until soft, add a pinch of salt, pepper, mixed herbs and garlic for each portion and add the peppers, stir so that all ingredients a lightly coated in the oil. Keep stirring until the onions and peppers start to brown, then add the tomatoes and simmer until thick. Add your favourite cooked pasta, stir and serve with shaved parmesan and a fresh basil and rocket salad. Nice.

  2. green peppers and tomato base will lend themselves to a bit of sugar if desired . Red peppers sweeten by roasting before using in a dish.
