pasta in tomato sauce

Question by Fauna: What kind of tomato sauce so you make with fresh tomatoes and fresh basil?
Maybe to go on some pasta, or make lasagna.

That is just a plain tomato sauce. I would mark an ex on the bottom side of the tomato (the non stem side) and then dunk into boiling water for about 10 seconds. Take it out and stick it in ice water. It should loosen the skin so you can peel it easily. Now chop up the tomatoes into about a small dice. Then easy way is just put into a pan, and slowly simmer. You can add about half of your basil. And let that cook slowly for as long as you want. Then add the rest of your basil. If you want reall chunky sauce leave as is. If not, you can puree it to make it to the consistancy you want. If too thick, you can add some water, but like tomato juice or sauce or something tomatoey is better but it still works. Just be really careful. You can then use it on anything. Other spices could be added, like pepper flakes, oregano, fennel seeds, anything like that would be great. Really, just do whatever you think will taste good. Have fun
