Question by Toasty: What can I put into a basic pasta tomato sauce to make it more filling and nutritious?
At the moment the pasta sauce feels like a light meal, so what could I add to make it seem fuller? Cheap recommendations would be great as well.

You can sweeten it with carrots, kick it up with diced bell peppers, sliced garlic, chopped onion, and if you like spice, add a dash of chili paste or red pepper flakes.

A classic example of this would be penne arrabbiatta, which you could create by simply adding cooked and slice Italian sausages along with a few hot peppers. (check out video below).
Also sliced chicken breast in pasta is a sure-fire hit and def makes the meal more substantial. Perhaps garnish with a few block olives as well for some texture and color.

This is a recipe I always use, 2 sticks of celery, 2 carrots, 1 red onion, 2 cloves of garlic. Chop them up pretty small then if you have one, pulse in a food processor. Cook them in a large heavy bottomed pan for ten mins, then add a tablespoon of chopped rosemary, cook for a couple mins. From here you could add peppers, mushrooms, any veg really and tinned tomatoes and cook gently for 20 mins. You can also add mince before you add tomatoes. Still cooks for 20 mins and this is always delicious. If you add mince before tomatoes cook till browned before adding tomatoes. Happy cooking!

It’s all about abandoning the heavy cheeses and high sodium sauces in favor of healthier.Once you have a saucepan of water boiling, some varieties of pasta can be cooked.Simple sauces like pesto are ideal for long and thin strands of pasta while tomato sauce.
Gillian is describing a bolognese sauce, which is as nutritious and filling as it gets. Since you already have the sauce, start out with a deep saute pan, add a tablespoon or two of olive oil. Use your food processor to finely mince 2 stalks of celery, 2 medium peeled carrots, 1 medium onion and 1 or 2 cloves of garlic. Put your veggies in the oil to start cooking. When they are softened, add one pound of lean ground beef or turkey, breaking it up as it cooks. Add 2 tbsp tomato paste, cook and stir for one or two minutes until it’s well combined. You can, at this point, add in 1/2 cup wine, red or white, if you have it. Use broth or water if you don’t. Pour in your basic tomato sauce, reduce heat, cover and simmer. If the sauce is too thick for you, add some of your pasta cooking water to loosen the sauce. You may also stir in 1/4 cup milk at the end, classicly cream is used but milk will be fine. I add fresh chopped basil at the end.

Other people there have given their ways of making spaghetti sauce taste better too (and often be more filling).
(You could also use whole wheat pasta rather than regular refined pasta…the whole grain will be more filling. It doesn’t taste quite the same though, and some brands are definitely better than others.)
