Only long term storage ingredients, like tomato sauce, pasta, caned mushrooms, olives…….
No fresh vegetables or fresh meat.

Spaghettini alla Puttanesca
Noodles whore-style
According to legend, this dish was created by women of the evening between gigs. The ingredients could be kept on hand without refrigeration [cheese is not traditional in Spaghettini alla Puttanesca] and thrown together in a few moments

Ingredients
1 lb. spaghettini, cooked al dente
3 oz. extra virgin olive oil
3 oz. pitted Niçoise or Gaeta olives
1 lb. ripe tomatoes
3 oz. anchovies
1 clove of garlic, crushed
1 peperoncino [dried red chilies]
1 1/2 oz. capers
coarse salt
Method
Chop the anchovies. Peel the tomatoes, dispense with the seeds and cut into small chunks. Pour the oil in a warmed skillet and add the garlic and peperoncino, cut into small pieces. Cover. Cook over medium heat until the garlic browns.
Remove garlic and add the anchovies. Add tomatoes, olives and capers [well washed]. Stir and let cook for about 7 minutes. Taste the sauce for seasoning. Pour the sauce over spaghetti in a skillet with the sauce, toss well and serve

Easy breezy spaghetti:
Boil pasta according to package directions, drain
In sauce pan mix together: 1 28 oz can tomato sauce, 1 can drained mushrooms, 1 can sliced olives (drained), 3 T Italian Herbs, 1 tsp onion powder, 1 T brown sugar, 3 T good olive oil, 1 tsp ground pepper. Bring to a boil and season to taste. Reduce heat and simmer for flavors to blend for at least 15 minutes. Optional additions: 1/4 cup grated parmesan cheese and/or 1/2 cup red wine.
Toss with pasta and serve.
Not even garlic and onions?
Okay then, a table spoon of olive oil, saute canned mushrooms and olives and pour in tomato sauce, let simmer for 10 minutes and enjoy over pasta.
Note, always have onions in the fridge, they keep well for weeks and bottled crushed garlic in the fridge is a good thing.
You can’t from scratch means using things like fresh veggies and meats. If you have canned ingredients you can still make it but it will be from canned and not from scratch.
Olives & Tomato Sauce
1 pound dried spaghetti
1/4 cup olive oil
1 1/4 cups mixed olives, pitted and halved
1/2 tablespoon red pepper flakes, plus more if desired
3 cups tomato sauce
1/2 cup Parmesan or to taste
1/2 cup basil leaves, shredded or to taste…..
Cook noodles according to package directions………
In a large saute pan, heat oil. When almost smoking, add olives and red pepper flakes. Saute for 3 minutes over medium high heat. Reduce heat to low and carefully pour in tomato sauce and simmer for 10 minutes…..
Drain pasta in a colander…… Add pasta to the sauce and toss to coat completely…..Or add pasta to plate and drizzle sauce over noodles…..Sprinkle with Parmesan cheese and basil. ……………….
Homemade Spaghetti with Meatless Meatballs
Homemade Spaghetti
1 c flour
1 c water (or 2 eggs)
2 tbsp oil
-In a bowl form the flour into a well and pour the water/crack the eggs into the center
-Using a fork, combine the flour and water/eggs by stirring in a circular motion at the center and working outwards to incorporate more flour little by little
-Once a dough is formed bring it to a counter or flat surface and coat with oil to incorporate any loose flour or pieces of dough while kneading
-Knead until smooth, then let the dough rest, covered, for an hour or overnight
-Roll out the dough until it is just about 1/2 in thick, then cut into four equal parts
-Roll through the pasta maker adding flour to the surface of the dough if necessary until the pasta is to your desired thickness, then send through the cutter
-Allow the pasta to hang dry on some sort of makeshift pasta dryer… hangers, skewers, clotheslines and wine racks welcome!
-Bring a pot of water to a boil and add the pasta to cook for about 3-5 minutes just before the sauce is done
MEATLESS MEATBALLS
1 egg
1 c. Ricotta cheese
1/2 c. bread crumbs
1/2 c. Parmesan cheese
8 oz. pkg. chopped spinach
Beat egg. Add Ricotta cheese, bread crumbs and Parmesan cheese. Thaw and squeeze water out of spinach; add to mixture. Roll into balls and roll in flour, then drop in boiling water for 10 minutes.
Basic Pasta Sauce
1 large garlic clove, diced
1/4 c onion, diced
2 tsp oil
2 medium tomatoes, diced
2 spoonfuls tomato paste (about 2 1/2 tbsp)
1 can tomato sauce
1 tsp oregano
1 tsp basil
1 tsp rosemary
salt
-Heat the oil and cook the garlic and onion
-Add the diced tomatoes and let cook for about a minute
-Add the tomato paste and mix with the diced tomatoes, then add the tomato sauce and mix well to dilute the tomato paste
-Add the spices and cover to let the sauce cook for about 20 minutes
-Add the “meatballs” and rinsed/drained pasta to the pot of sauce and mix well to serve perfectly coated pasta, then top with parmesan!
