Question by Dominic La rocco: Salsa recipe confusion? Help please?
So here’s my salsa recipe:
2 cans dice tomatoes
1 Serrano
3/4 tsp cumin
2 cloves garlic
1 cup cilantro
1 lime
1/2 onion
Salt to taste
1/4 tsp paprika
So I was in ND visiting some family when I first came up with this. I bought the ingredients for it there, and when I made it it was amazing. I came back to OK (where I live) and remade it. It was ok, but not nearly as good. Surely the area in which I bought the ingredients wouldn’t affect it that much! Right? Should I use less of the ingredients and then add more to taste??? Any suggestions as to what happened, or ideas as to what I could add???
BTW: I’m new to making salsa. LOL. Thanks!

the fresher the serrano, garlic and cilantro– the better it will be.

With the exception of the canned and prepackaged ingredients, you are ALWAYS going to get some variations in taste from fresh produce – serrano, garlic, lime, cilantro, onions do not all come from the same place; soil and climate conditions can make a huge difference in how fresh produce tastes.
In addition, the same recipe can turn out different depending on WHERE you cook/make the dish because of elevation, local water supply, and temperature.
Yuck! That is not salsa. When you try FRESH salsa, you will never use canned tomatoes again. Here is my recipe. I don’t care for cilantro, so I don’t use it. But, you can certainly add a little.
FRESH GARDEN SALSA
6 med. tomatoes, diced
3/4 c. diced green pepper
1/2 c. diced onion
1/2 c. thinly sliced green onion (mostly green part)
6 cloves garlic, pressed or minced
2 tsp. lemon juice
2 tsp. lime juice
1-2 tsp. vegetable oil
1-2 tsp. minced jalapeno pepper (more or less to taste)
1-2 tsp. ground cumin
1/2 tsp. salt
1/2-1 tsp. cayenne pepper (more or less to taste)
