Question by electroblather: How do you make perfect pasta sauce from your own garden grown tomatoes?
I won’t be using a tomato paste from a can. What is the trick to making good tomato paste?

You really shouldn’t be trying to make paste rather what’s called passata http://www.holidayinmarche.com/passata.html

  5. Hi! Thanks for your comment. We’re not sure what “regular” oil means to you, but you could probably try this recipe with another oil. We can’t guarantee the results will be the same, however.

  8. Peel the tomatoes. To do this put them in a bowl filled with boiling water (not a job for the kiddies!). After that if you want to make tomato paste, blend them in a blender and add a bit of salt. If you jusr want to make tomato pasta sauce, i usually just chop up the tomatoes into cubes and fry them along with onion and garlic, plus extra vege of your choice (mushrooms and eggplant usually are mine), plus tomato paste to thicken it a bit, seasoning and any herbs you like (corriander and parsely are good).

    edit: i forgot to say that if youre making tomato paste youre going to have to strain in through something fine to get rid of the seeds.

  9. Experiment but for starters do this: Put the tomatoes in a blender. Add a couple table spoons of olive oil, a pinch of oregano, some garlic – either fresh or chopped garlic in a jar, and if you have a red wine, put a couple tablespoons. And a teaspoon of red pepper powder. I’d taste it after you put all the ingredients in – that way if it needs more of something you can add it on before cooking.
