  2. Marinated Tomatoes and Grilled Onions

    3 tomatoes, sliced 1/2-inch
    Marinade:
    1 teaspoon garlic, minced
    1 teaspoon ginger, minced
    1 tablespoon basil, minced
    1 teaspoon olive oil

    Mix all marinade ingredients together and marinate tomatoes.

    1/2 onion, sliced
    Marinade:
    2 ounces marinade
    1 ounces brown sugar
    1 tablespoon ginger, minced

    Mix all marinade ingredients together and marinate onions. Grill onions until soft, serve at room temperature.

    Marinated Tomatoes And Onions

    1 1/2 lb tomatoes; sliced 1/2-inch
    thick
    6 oz red onion; sweet
    1 1/2 tb extra virgin olive oil
    1/4 c red wine vinegar
    1 ts sugar
    1/2 ts salt
    freshly ground pepper
    3 tb minced parsley
    2 ts fresh oregano leaf
    2 cloves garlic; thinly sliced

    3 large tomatoes, 1 medium onion. Peel the onion and cut into rings. Slice vegetables into a nonreactive container. In a small bowl, whisk together remaining ingredients. Pour over tomatoes and onions. Cover and allow to stand 30 minutes at room temperature or longer, refrigerated.

  3. I like to slice them thinly and marinate them in Italian dressing. Easy and delicious!

    Sometimes I add thinly sliced radishes to the tomatoes and onions when I marinate them. YUM!

  4. Yup, you got it. Thinly sliced is the key to success. Don’t marinate – really you just want to toss the slices with an oil and vinegar based dressing.

  5. I made some last night by rough chopping the tomatoes and onions, adding some dried basil, and about 1/2 cup of balsamic vinegar.

  6. We have that all the time in Spain. You don’t marinade anything. Just thinly slice the tomatoes, beef ones are better, then thinly slice the onion. Add a little fresh basil and oil and vinegar. I prefer white wine vinegar, but you can use balsamic if you prefer. Make it fresh and serve it fresh.

  10. One way to do it is the way everyone else has said – slice and marinate in vinegar and oil or Italian dressing. Another way is to add sliced cucumbers to the tomatoes and onions and then marinate in either sour cream or plain vanilla yogurt. Either way is very tasty.

    Cherry Tomatoes Phase 1
    10 cherry, grape, or small heirloom tomatoes (or mix thereof)
    2 teaspoons dried oregano
    2 teaspoons balsamic vinegar
    1 tablespoon olive oil
    1/4 teaspoon salt
    1 pinch ground black pepper
    DIRECTIONS
    Halve tomatoes and toss with oregano, oil, vinegar, salt, and pepper. Let sit for a minute or two to let flavors develop. Enjoy.
