I have three types of hot sauces:
A store brand jalapeño with jalapeño and vineger and a preservative.
A brand of chipotle (Búfalo) with vinegar and preservative.
Yucateco Habanero sauce (red) with tomato sauce and preservative.

I leave mine on the table. They usually last about a month or less by me. If they last longer, or I am saving them, I will store them in the fridge.
I think hot sauces should be bought and used. I have had friends that bring out a crusty old bottle that was sitting in the fridge for years and put it on the table. Yuck

vinegar and a preservative are a good combo for several weeks. i use my hot sauce (i also have 3 at a time) (tapatio, el pato, and franks) a lot and rarely keep if for more than 2 months, but i don’t refridgerate it ever.
also, i never refridgerate ketchup. even though it might say so on the label, restaurants never do. although restaurants use ketchup pretty fast.
besides, who wants cold ketchup on their fries?
