Question by Stevie: Rachael Ray tortilla soup recipe?
There was a recipe she made on 30 minute meals years ago. It was a tortilla soup with chicken that was supposed to be comfort food but very healthy and low-calorie, and she said it was ideal if you’re dealing with a break up because it would make you feel better without making you fat or bloated. I went to go find it, but she has a ton of chicken tortilla soup recipes, and I don’t know which one it is. I can’t find the calorie counts on the food network pages for her recipes, so I can’t even figure it out that way. Anyone know which tortilla soup is the one I’m looking for?

Rachael Ray’s Green Tortilla Soup

I made this after seeing Rachael do this on TV very yummy ! Instead of Avacado I substituted a slimcado. You can also substitute water for broth.

Ingredients

Onions, Jalapeno Peppers, Tomatillos, Chicken Breast, Corn, Slimcado, ColbyJack Cheese,Limes,Corn, Chicken Broth, Corn Tortilla chips

Directions
Heat olive oil in skillet and saute onions and chopped jalapeno peppers. In a sauce or stock pan boil chicken breast in broth until chicken is fully cooked (remove chicken and let cool) add corn to sauted onions and peppers add cumin. Puree tomatillos in food processor add to broth.
Chop up chicken and add to broth. then add onion corn pepper mixture to broth and add lime juice and lime zest. serve in bowl over slimcado and baked tortilla strips (you can cut corn tortillas spray with cooking spray and bake them at 425 for 10 mins) and top with cheese…enjoy!Number of Servings: 6

What is a Slimcado?
The fruit boasts roughly 35% less calories and half of the fat of a regular avocado. It looks nearly the same as it’s traditional counterpart with a few slight variances. There are about 30 varieties sold commercially, but some of the most noticeable differences are that the large seed inside the center of a reduced calorie avocado is slightly fuzzy, and they tend to have a shinier, smoother outside skin.

These fruits are grown in Florida in a climate that is much wetter than the ones that regular avocados are grown in. The result is a sort of watered down, less calorie dense version of the original fruit that we all know and love.

Here’s the part about this lower calorie food that doesn’t make any sense; the fat of an avocado is part of what makes it such a superfood. Because of it, eating avocados on a regular basis has been shown to raise good HDL cholesterol and lower harmful LDL levels. The fat is excellent for your heart health, along with the appearance and condition of skin, hair and nails. The nutrition “perk” of this version of the fruit is that it has a lower content of the very thing that makes the fruit so healthful in the first place.

Rachael Ray – Chicken Tortilla Soup With Chipotle

3 cups chicken stock
1 lb chicken tenders
1 bay leaf , fresh if available
1 tablespoon extra virgin olive oil , 1 turn of the pan
4 slices bacon , smoky thick center cut, chopped
1 onion , finely chopped
4 garlic cloves , chopped
2 chipotle chiles in adobo , chopped, plus 2 tablespoons sauce
1 (28 ounce) can crushed fire roasted tomatoes
salt
4 cups lightly crushed corn tortilla chips
2 cups shredded fresh smoked mozzarella cheese or 2 cups smoked sharp white cheddar cheese , 3/4 pound
1 lime , cut into wedges
1/2 red onion , chopped
freshly chopped cilantro leaf , for garnish

Directions:

Bring broth to a simmer and add chicken tenders, poach 6 to 7 minutes with a bay leaf.

While chicken poaches, heat extra-virgin olive oil in a medium soup pot or deep skillet over medium-high heat. Add bacon and cook until crisp then remove with slotted spoon. Drain off excess fat, leaving 2 to 3 tablespoons in the pan. Add onions and garlic to the skillet and cook 5 minutes then stir in chipotles and tomatoes.

Remove chicken from stock, dice and then add to soup. Pass stock through a strainer then add to the soup.

Place a pile of crushed tortilla chips in the bottom of each soup bowl. Cover liberally with smoked cheese then ladle the hot soup down over the top. Serve with lime, raw onions and cilantro at table to finish the soup.
