I made a chicken vegetable soup w/Rotelle Tomatoes w/chili peppers plus regular diced tomatoes. It’s way too spicy and I’d like to take the “bite” out of it somehow.

it does take the bite, but use sparingly or it will be too sweet. Otherwise you can add more of the base and other ingredients, but you will end up with a lot of soup.
I think you should just eat it. I like spicy food : )
Milk cuts the hot feeling too, drink a glass of milk while you are eating it.

Stir in sour cream or cheese or both.
Have bread or tortillas available to eat with the soup and a dollup of sour cream and/or avocado will soothe the heat.
In a quart measuring cup, ladel out about 2 cups of soup. Gradually add 1 1/2 cups of sour cream or 1 1/2 cups milk, whisking to combine. Then add back to the soup pot and stir. The dairy will cut the spiciness.
Add a tbsp of unsalted sweet cream butter.
Add a little sugar, and maybe a can of stewed tomatoes.
You can add a few squirts of honey to lessen the spiciness. Or you can add small amounts of sugar at a time. You can also stir in sour cream into individual servings but not into the whole pot. You could also add more broth but then would have to thicken it a bit later on.
You can also add a bit of plane yogurt. Works the same as sour cream. I would recommend a higher fat one.
Add sugar a pinch at a time and taste. Sweet balances out spicy.
Add cubed potatoes. They will absorb some of the spices as they cook. This is also a good way to remove some salt if you get too much salt in something.
