Description: This is salsa made with “fire-roasted” tomatoes, garlic and peppers. There are many recipe variations for this salsa. Here’s a basic one, if you want to make your own:
3 large garlic cloves, unpeeled
2 large jalapeno chile peppers
15 ounce canned fire-roasted tomatoes
1 tablespoon fresh lime juice
2 tablespoons white onion, finely diced
2 tablespoons fresh cilantro, finely chopped
1 teaspoon salt, or to taste
Roast garlic and jalapenos in a dry, heavy skillet set over medium-high heat for 5 to 8 minutes, turning vegetables occasionally, until softened and charred in spots.
Remove from heat and cool until they can be handled. Remove garlic skins and cut stems off jalapenos.
Transfer to a food processor; chop fine. Add tomatoes and puree.
Transfer to a serving bowl. Stir in lime juice, onion, cilantro and salt.
