Question by heigill: can you help me make my own salads?
i am a lazy college student who wants to save a little bit of money by not eating out but still lazy to cook. so i thought why dont i just eat salad everyday – plug some lettuce throw some cherry tomatoes and voila! this however gets so boring.. and i am worried that this would be unhealthy. how can i make sure that i get all the balanced nutrition i need?
what are easy way to cook chicken breasts, salmon, turkey for salads?
how long can i keep my lettuce in the fridge before it gets not crunchy anymore?

chicken breasts cook up really quick cut into small pieces and fried in a little oil,or just coat with pam cooking spray.salmon bakes pretty fast in the oven,you can put lemon pepper on it . to keep your veggies fresher longer you can keep them in water.cut up your lettuce,but not too small and carrots ect.put in a jar of water.

The best and fastest way to add meat to a salad is to dice up some cold cuts. Otherwise, grill up some chicken on a George Foreman grill. Just season with whatever you like: salt, pepper, garlic salt, onion powder and oregano is pretty fool-proof. Hard boiled eggs are also an excellent protein option.
To keep lettuce longer, chop the whole head and store it IN water. This keeps it from wilting. Then just strain out what you want each day.
The best way to experiment with salads is to try different greens and dressings. My favorite is basil and arugula with diced pears and blue cheese. I use some honey as dressing. It is AMAZING. Try Greek salads with feta cheese, tomato, cucumber, kalamata olives, red onion, peppercinni, olive oil, lemon juice and oregano. Caprese salads are also VERY good: tomato, fresh mozzarella, basil, salt, pepper and olive oil.
To keep salads healthy, choose low-fat cheeses or less processed varieties. They have more flavor, too so less goes a long way. Stay away from heavy dressings and use omega-3 rich olive oil (again, a little goes a long way), balsamic and red wine vinegars, or lemon juice. Oh, and skip the croutons!

Poach chicken in pan on top of stove in chicken stock and with spices of choice when cool debone and dice for salad .Tear lettuce and add chicken along with diced apple and chopped walnuts . add shredded carrots, Use an oil and vinegar dressing or a prepared dressing like a caesar Could add grape tomatoes and/or cucumber or radish. For variety use mandarin orange segments in lieu of apple. salmon is great to add to a pasta salad with mayonnaise and liquid smoke for flavoring. Wrap lettuce in a moist terry towel and will keep up to a week in crisper . Try using Romaine for crisper and better salad . Try adding bacon bits to a salad as well as rinsed tinned beans like kidney or chick peas/romano etc.also consider diced or grated cheese like cheddar or sprinkle with parmesan
chicken breast in regard to chicken are the easiest to prepare for salads and the most healthy..bake them for 15 mins at 350. remove from oven and put on a plate, cover with foil and let cool.
the spices you use depends upon your taste.but seeing that you will be using them as salads just stick with salt and pepper.they will keep for 2-3 days….you can slice them into strips and use them on a green salad or make a chicken salad…add 1/4 cup mayo to a cup of diced chicken,1 T chopped bacon ,and some diced tomatoes.and shredded cheese.
There are several things you make a head of time ,boiled eggs are a good source of protein,either in a salad or as a salad.

Pasta…prepare,rinse and keep in the fridge.If your primary source for cooking is a microwave.having prepped pasta,diced chicken breast and a jar of Alfredo would make for a quick healthy meal.

the cheapest and easiest way would be to buy bagged salad and add more ingredients to them. You can add shredded cheese, sunflower seeds, croutons, cucumbers, peppers, or whatever you want. What I do to cook my chicken is to put the chicken in a pan lined with foil and season to your liking, add a little bit of water and then cover the pan with foil. if you have time cook it at a low temp like 325 for a couple of hours and it will practically fall apart. You can cut it into cubes and add to your salad and put the rest in the freezer of fridge for futures use. You can purchase bags to put your lettuce in to make it keep longer but I have found out it is alot easier to buy bagged salad.
While trying to learn to down size my cooking after my 3 children grew up and left home I have found that most packages are too big . We couldnt finish a head of lettuce or a bag of greens before they wilted or got mushy. I started to get greens and mushrooms from the salad bar at the large grocery store I worked at.I would just buy what I wanted for a meal or 2. Nothing goes to waste vegetablewise now. You can also pre cook chicken strips and freeze then preportioned like in a restaurant setting. Just cook all at once-when you are in the mood-then pull out as needed. Preprepping is what saves time in a restaurant. Plan a few favorites and keep those ingredients on hand. Maybe freeze flat breads or “wraps” and pull one at a time to thaw forquick healthy meals. WIth a little preparation you can cook when your want to and save time.
