It is a sauce from Morocco called Harisa, it is a pepper sauce with a spice base and corinader.
You can buy it at stores that sell Arabic or North African foods, it comes in tins, about 4-6 oz in size, some will temper it down as it can be fiery, a mix with eiter of things tomato sauce or ketchup, this keeps the fire but makes it palatable to all customers.
I am a former chef, and have had my share of donner kabab, falafel, shawarma and other middle eastern foods and like to use this in alot of other cuisines.
