Italian Pasta & Beans Soup – Saute chopped celery, onion and garlic in olive oil, add chicken broth, any shaped pasta, salt, pepper, oregano and a bay leaf. When pasta is nearly done, add 1 can white cannalini beans, drained. Simmer to blend flavors. Serve with a sprinkle of grated cheese. Optional: add some tomato juice and diced zucchini, as I did today.

  3. I have to keep an eye on the peppers, checking them every couple of days. If I see them start to mold, I’ll cut off the bad spot and use the pepper right away. Sometimes they make it all the way to super soft and wrinkly and then they taste like cheese. I love them! But they don’t always make it to that point. :0)

  8. Lovely! I will try your tip about the red peppers. I eat a lot of them and sometimes they’re good and sometimes not so good! Maybe this will up the ‘good’ ratio :-)

  16. HEARTY TOMATO RICE SOUP

    2 tablespoons butter
    1 lb. hamburger
    1 cup onion, chopped
    1/2 cup celery, chopped
    1 large can tomatoes
    2 1/2 cup water
    2 beef bouillon cubes
    1/3 cup dry rice
    salt and pepper to taste
    1 teaspoon fresh basil or half teaspoon dried
    2 tablespoons fresh parsley, chopped
    3 garlic cloves, minced or 1/2 teaspoon garlic powder

    Saute hamburger and onion in butter; add celery. Break up hamburger into small pieces.
    Combine with remaining ingredients. Cook over low heat 30 minutes or until rice is tender.

    Optional: Use chopped steak instead of hamburger. Stir in 1/2 cup of heavy cream 10 minutes before serving.

    HEARTY ITALIAN SOUP

    1 lb. bulk Italian sausage, mild
    1 (15 oz.) can Italian style tomatoes, peeled
    1/2 c. green pepper, diced
    1/2 c. onion, diced
    1 tsp. garlic, minced garlic or garlic powder
    2 (8 oz.) cans tomato sauce
    2 c. water
    1 c. Mozzarella cheese, shredded
    3/4 c. pasta shells (or tortellini)

    In large pot brown sausage with onion and pepper. Drain thoroughly. Add everything else EXCEPT pasta and cheese. Simmer 15 minutes. Add pasta shells. Simmer 10 to 12 minutes. Serve hot garnished with cheese.

  17. Hearty Beef Vegetable Soup with Noodles
    1 pound ground beef
    14 ounces tomato sauce
    8 cups water
    2 onions — chopped
    1 pound frozen mixed vegetables
    6 ounces egg noodles
    1 1/2 tablespoon extra virgin olive oil
    1 tablespoon oregano
    1 tablespoon chili powder
    1 tablespoon freshly ground pepper
    2 teaspoons red cayenne pepper
    2 teaspoons salt
    Put water, tomato sauce, onions, and frozen vegetables into a pot. Add the seasoning and olive oil, heat on high for 30 minutes. Brown the beef in a frying pan, transfer the beef to the soup mixture using a slotted spoon to leave the fat in the frying pan. Turn the heat to medium, heat for 10 minutes. Add the egg noodles, turn the heat to low and heat another 20 minutes. Taste and adjust seasoning. Serve with grated Parmesan cheese.
