This is going to sound way too simple, but try it…
Melt some Velveeta cheese in a sauce pan on a very low flame and then thin with tomato juice. Add your noodles (I prefer wide egg noodles or wide egg-less noodles).
That’s all.

PS – That is cooked and drained noodles BTW.

You can make a sort of vodka sauce from it. Vodka sauce is typical cream and tomato paste… but you can make this work!
Take 1 TBSP butter and melt it in a pot. Whisk in 1 TBSP flour. You’ll end up with a thick paste. Slowly add in 1/4 cup of milk, a little at a time, whisking until it begins to thicken before adding more. Once all the milk is in, you can add in your tomato juice, a little at a time, just like you did the milk. Add in some basil and parsley, salt and pepper and IF you have it, a pinch of beef bouillon.
Serve over pasta!
Even better if you have onions and garlic handy.
Saute a cup of chopped onion,a few carrots, finely diced, and about 4 cloves of garlic,minced,in a little olive oil until they are soft. Be careful not to let them burn,because burnt garlic is awful. Add your meat if you are using it,let it brown,drain excess fat. Add the tomato juice,a teaspoon each of basil,oregano,Italian seasoning,parsley and black pepper. Add 2 teaspoons of sugar and 1/3 cup of Parmesan cheese. Let the sauce simmer for at least an hour until it is thick.Taste it and add more seasoning if needed. If you are using meatballs,add them to the sauce last. Or you can go meatless,of course. For a spicy sauce,add a half-teaspoon of cayenne pepper.
To thicken it up,you can add a can of tomato paste or even tomato soup if you have any.
