Question by Rockin’ Rosette: I need a recipe for guacamole….w/o tomato.?
I’m allergic to tomato….so the simpler the recipe is the better. Any way I didn’t think that anyone put tomato in guac until an office party…was that authentic?

If you live in the US, the packet mixes you get at the supermarket are actually pretty good – all you usually need to add is the avocado and some lemon juice – just check that the one you get doesn’t have tomato in it if you’re really allergic.
I live in New Zealand, but my mum has her family friend send us over the MacCormick’s (spelling?) brand packet mix for guacamole – it’s pretty good.

I make mine with:
Mashed Avocados
Minced Purple Onion
Chopped Cilantro (just a little bit)
Crumbled Bacon (sometimes!)
And then season it with:
Salt and Pepper
Cumin
Lime

Here is a good recipe for Guacamole, and a good place to start if you want to develop your own version:
In a glass or stainless steel bowl, mix together:
flesh of two pounds of avocadoes, 2 or 3 cups
1/4 to 1/2 cup chile, if green, tsp to Tbl if hot dry red.
3 clove garlic, minced
1/2 medium onion, fine chop
Juice of one lemon or two limes, more or less
3 tsp dry leaf oregano
1 tsp freshly crushed cumin seed
bit of salt and pepper
Mix Guacamole well together, sprinkle a little more lemon or lime juice over the top to keep it from darkening, and let mellow for an hour or two.
Guacamole makes a great garnish for just about anything, or you can serve guacamole as an appetizer with chips or tostados, slices of lemon or lime, a bit more oregano, fresh cilantro and any kind of chile imaginable.
for my Guacamole i use…
Onion (diced very fine)
Capsicum/pepper (diced very fine)
Avocado (mashed)
lemon juice
chili
garlic
i think tomato can be used for a guacamole but i dont think it is authentic
I do not use tomato nor sour cream! Living in California, everyone has a recipe for guacamole, and this one is easy and yummy! Try it:
Guacamole –
Mash as many avocados as you wish – I usually use 3 good-sized avocados and I don’t make the mixture totally smooth like baby-food. I like it a bit chunky, but whatever you like is best.
Roll one good sized lemon – this helps the juice come out of the fruit. Cut the lemon and squeeze all of this juice into the avocado mix. Sprinkle a little salt and freshly ground pepper into the mix, and mix the lemon juice through the avocados. Very finely dice one onion – if you like onion, use a medium onion; if not use a small one. I like to use a sweet white onion because a stronger, yellow onion will over-power the sweet taste of the avocado. I like to take one large clove of garlic and very finely mince this into the mixture as well. We like guacamole that has a little zip to it, so I put in just a drop of chile sauce. You can use tabasco or any type of “heat” that you like. That’s it! I mix it all up, cool it, and serve it with lots of chips.
Quick and delicious:
Cut the avocado in half, discard or try to root the pit.
Score the flesh on both halves, scoop the flesh into a bowl with a spoon. Add lemon and/or lime (a squirt). Add something hot, like chili powder, tabasco, ground red pepper or *my favorite*, all of the above.
A bit of mayo and/or sour cream will enhance the avocado, and add to the amount of yummy dip you get!
Some onion, grated, and some garlic, mashed will put you into ORBIT, so please Guac responsibly
avocado, lemon juice, garlic, chili powder, cilantro, salt, pepper and if you want it to go further, use some sour cream too.
