Question by Xavier D: what recipes can i make with chicken salad?
im tired of eating chicken salad sandwiches and i want something new….any help??

Cut top of tomato, cut tomato in sections. Place bed of lettuce on plate top with tomatoes and chicken salad.

  1. Try serving it over greens as an actual salad, or try stuffing it into a pita or rolling it up in a wrap. Toss it with some cooked twirly pasta (i think it’s called rotini) with some extra mayo to make chicken pasta salad.
    Also, try “mixing it up” with the chicken salad ingredients. I love to add chopped walnuts and black cherries. Grapes work well too.
    This is a really good recipe that uses canned chicken that you might try as it is very simple:
    Cook your favorite stove top mac and cheese recipe (we like macaroni, velveeta, a little milk, butter, and salt&pepper) and combine with:
    1 can diced green chiles
    half one small can green chile enchilada sauce
    1 large can white meat chicken (or 2 small)
    Pour mixture into a casserole dish and top with shredded cheese. Pop in a 350 degree oven and bake just until cheese on top is melted and bubbly. Enjoy! Makes great leftovers inthe microwave too!
    Just make sure your mac and cheese recipe is thick and creamy, not thin and soupy or else the green chile enchilada sauce will probably make it too thin.

  3. I’m a big fan of chicken and tuna salad, so here are some yummy ideas to turn this old classic into something new.

    1. Salad-stuffed peppers. cut the tops off of red (and orange, yellow, green, whatever your fancy) peppers, remove the seeds and insides, and roast. Then fill with the mixture. It’s so yummy and looks delicious; it’s very good with rice, or just serve with your favorite seasonings.

    2. Grilled chicken crostinis. Take bread and cut into squares or circles; they should be small enough to eat in two bites and thick enough to support the mixture. Drizzle with butter or olive oil and bake into crispy (you can also cheat–toast in your toaster and then drizzle) and then spoon the mixture of chicken salad on top. It looks great with a little fresh parsley on top, and if you want to add chopped tomatoes, mmmm! Yummy!

    3. Classic and simple. Take a pack of wraps (like for making quesadillas), spoon the chicken salad onto it with maybe some lettuce, tomato, etc. and wrap it tightly. You can serve it cold, or heated up (though I prefer cold). They also pack very well for lunch at school or work.

    4. Add it to pasta! A thick noodle like fettucini with a creamy alfredo sauce would do well with some chicken salad on top. Roasted tomatoes, or toasted almonds go with this really well.

    5. When all else fails, make a melt! Add the chicken salad to bread with cheese and throw it on the stove until the bread is golden and the cheese is melted.
