Question by Leslie D: What seasonings/flavors do you use in your lentil soup?
I already have 2 lentil soup recipes that I like, one of which includes potatoes, spinach, and a bit of allspice, the other of which uses leeks and sausages. I’m wondering what other flavor combinations I might try. Will you tell me what you like to use?

I would rather know what ingredients YOU like to use in your own kitchen than get a link, if possible. Thanks everybody.

I use turmeric and garlic in my lentil soup.

  1. Black pepper and add in ham hocks or a pork butt cut up into pieces. Also, serving lentil soup with cider vinegar sprinkled over the top is another great taste too.

  2. I like to use cumin, corinader, curry powder and chilis either crushed or fresh, oregano and thyme are nice.

    I like green lentils but red one s cook faster breakdown smoother and they are not as earty tasting, I also go to a greek grocery store and get what are call Lathinia Lentils, small light green one that cooked like red lentils.

    I use zucchini to and celery is nice, tomatos if your using green lentils.

  3. as with 95% of soups i use a mirepoix of vegetables(carrot,celery,onion and leek) and possibly a bouquet garni(selection of herbs and spices made in a muslin cloth or bought in teabag style).
    in the lentil soup i make at work i add tomato puree sometimes, split peas sometimes, i a;ways make sure i have agood base to the soup and it usually tastes good.
    fresh ham stock is great for soups, or the addition of a nice bacon,cured pork or similar as long as you’re not veggie.
    indian spices work great, also like you’re making a dahl or a dhansak(sweet, sour and hot). and also making it with different types of lentils makes a change from the norm.
    thinking of it now, how about a cheese and bacon crouton to go on top, a big one?

  4. Red lentils in a chicken stock, with tomatoes, carrot, garlic, onion and red bell pepper. Salt, pepper, cumin and (the secret ingredient) a splash of lemon juice at the end of cooking.

  5. ham, onion, celery, carrots, garlic, tomato paste, wine vinegar, bay leaf, salt and pepper.
