Question by ket_fu: A good recipe for making a vegetarian bolognese sauce from scratch?
I’ve got heaps of fresh tomatoes and want to make a sauce rather than buy one.Anyone got a good recipe for a veg sauce?
And while im at it how about a fresh tomato soup,or something i can use lots of tomatoes in?

  6. Yes- I am not vegetarian but i make this sauce as an alternative cause its soo good. Basically its chopped and seeded tomatoes, onions, garlic, (cook them first with some wine) then add in many cups of chopped mushrooms. They will cook down to about 1/2 their volume, so use lots more than you think you would use. Cook this with salt and pepper for 1 hour or more- as long as it takes to cook down to the right consistency. Its awesome!!

  8. Bolgnese is by definition a meat sauce. You cant make it without meat.

    Now, if you want to make a nice marinara sauce out of the tomatoes, you need to blanch them and peel off the skins. Then, cut them and remove the seeds. (I leave them in though.) Depending upon the texture you want, you can put them in a blender to smooth them out or just dice them. Either way, they should yield a nice sauce.

    Sautee some garlic in olive oil. Do not burn the garlic. When the garlic is clear, add the tomatoes. Stir and lower heat. Bring the tomatoes to a simmer, NOT a boil.

    Add fresh basil, chopped.

    Add fresh parsely, chopped.

    Add a couple of bay leaves.

    Salt to taste.

    You can dump a carrot in there for sweetness. Some people use sugar. But wait until the tomatoes cook awhile before you do this.

    With fresh tomatoes, the liquid could be inconsistent, so you might want to add some tomatoe paste to thicken it. Cook it for awhile. If it stays watery, a small can of paste should do the trick.

    (OPTIONAL) If you want a sauce in the bolognese method, add heavy cream until the mixture turns a lighter red. Dont kill the sauce with too much cream though.

    (OPTIONAL) You can also add some vodka to the sauce. This is a very popular Northern Italian dish. Make sure you cook the sauce long enough to cook out the alcohol taste.

    You could use dried basil or parsely, but since you are using fresh tomatoes, you should use all fresh ingredients.

    This sauce should not take more than an hour to cook since there is no meat in there. Again, DO NOT BOIL. Slow simmer is best.
