Question by Lorenzo: Recipes for Oven-Roasting Tomatoes?
The tomatoes are coming on strong now. I don’t have a food dehydrator and I’d like to make “sun-dried” tomatoes that you can store for use through the winter. Once dried, do you store them dry? Or in olive oil?

Either i suppose, just make sure you have a kilner (or another air tight jar) and sterilize them by washing with hot soapy water, then just hot water and dry them in a cool oven. This is important so you can keep them for a long time without going off

If you want to store them for several months, you can store them dry in a zip-lock bag in the freezer. Try to get as much air out of the bag as possible. This is one of the best/complete procedure(s), & tips I’ve come across. Hope this helps.
