Question by mq1229: Looking for a Semi homemade spaghetti sauce recipe- sweet kind of sauce not bitter?
I say semi homemade, because I’m not looking to crush my own tomoatoes or anything. I have all kinds of sauce jars, paste, crushed tomatoes to work with, and all kinds of spices, onions, bell peppers. I’ve heard adding honey or brown sugar can help. If you give a recipe though could you include amounts for 4-6 people it would be great. Also clear directions because I’m not much of a cook, Thanks so much

Semi-Homemade Sweet Pasta Sauce
Ingredients:
1 tablespoon butter
1 1/2 lbs of extra-mince ground beef
1 onion
1 cup of slices carrots
4 sliced mushrooms
1/2 a pepper (color of your choice)
540 ml of diced tomatoes with herbs
1 cup tomato juice
1 (10 1/2 ounce) can condensed tomato soup
1 tablespoon basil
1 (700 ml) tomato and basil pasta sauce
1 tablespoon thyme
1 tablespoon oregano
2 tablespoons mixed Italian herbs
1 tablespoon brown sugar
1 teaspoon onion powder
2 garlic cloves
Chop the mushrooms, oinion, carrots, garlic and pepper.
Brown oinion with the carrots in a large pot in butter.
Add ground beef.
Cook until ground beef is ready.
Add diced tomatoes, tomato juice, tomato soup, pasta sauce and brown sugar.
Add vegetables. and chopped garlic cloves.
Add half of basil, thim, oregano and italian spices.
Let it cook at low heat for 15 to 20 minutes.
Add the rest of the spices.
Tast and add oinion powder if too acid. If not tasty enought add italian spices.
Let it cook for 20 to 30 minutes at low heat.

Here’s a nice recipe for marinara. I prefer mine with hot turkey italian sausage, but this will do nicely:
1 large can tomatoe sauce
1 small can diced tomatoes
1/3 cup good olive oil
3 T Italian herbs
1/2 cup fresh basil, chiffonade
1/4 cup fresh oregano
1/4 tsp red pepper flakes (optional)
Salt to taste
1/4 tsp fresh ground black pepper
1T sugar
Add ingrediants and let simmer until reduced and slightly thickened. Adjust flavors to taste, but remember, the longer they simmer the more incorporated they become. Enjoy!
Basil can give it a nice sweet taste. Use tomato paste & crushed tomatos, add basil, garlic & onion and simmer
If you dice up one glove of garlic, and half of a sweet red pepper and one small onion, let them start to sweat in the bottom of a big pan. Add just a dash of olive oil to soften them all up. Then add two of the big cans of Progresso brand tomatos. If you want to add meatballs, or even just some scrambled hamburger, do so now. Otherwise, just simmer for about 20 minutes. Then add one tablespoon of brown sugar and a teaspon of oregano. Simmer for 40 more minutes. Just before serving add some fresh basil. It’s so easy, but really good.

4 tablespoons vegetable oil
1 large onion, chopped
1 (28 ounce) can crushed tomatoes
2 cups water
1 (6 ounce) can tomato paste
3 leaves fresh basil leaves
2 cloves garlic, crushed

DIRECTIONS
In a large saucepan over medium-high heat, saute onions in the oil until golden brown. Add crushed tomatoes, water, tomato paste, basil, garlic, salt and pepper. Let the sauce come to a boil, lower heat to low and stir occasionally until desired thickness. Sauce is ready when oil rises to the top. Skim off oil.
Meat Sauce:
ingredients
pkg of meatloaf mix (ground beef, veal and pork)
olive oil
1 med. chopped onions
1 med chopped bell peppers
2 cloves chopped garlic
red pepper flakes ( to taste)
salt
fresh ground pepper
2 tsp butter
2 tsps italian spices
1 tsp. sugar
stock (beef or vegetable)
2-3 jars spaghetti sauce
directions:
in a large non-stick pan, melt butter and several turns of the pan of olive oil. Add salt/pepper, red pepper flakes,chopped onions,peppers and garlic. “sweat” the vegetable over low-medium heat. when softened, add ground meat and brown over medium heat. add spaghetti sauce, (use the stock to get the sauce left in the jars instead of water), spices and 1 tsp of sugar.
cover pan and simmer over low-med heat.

Simple recipe using canned foods… I use it for quick meals..
1 big can of stewed tomatoes (with Italian seasonings)
1 big can of tomato sauce
1 small can of tomato paste..
1 lb Italian sausage, taken out of the casing
1/4 to 1/2 teaspoon dried basil
1/4 to 1/2 teaspoon driend oregano
2 cloves minced garlic
chopped onion and bell pepper
salt and pepper to taste
Brown the sausage with the onions, bell pepper and garlic.
Add the tomatoes, tomato sauce, tomato paste, oregano and basil
Let simmer for 30 minutes
Stir and taste
My mom makes an awesome spaghetti sauce. Hers is the only one I will eat. She cooks it is a crock pot. She uses a jar of regular spaghetti sauce, adds cooked ground beef and meat balls. She buys a bag of frozen meat balls and just add them to the sauce. She puts brown sugar to cut down on the acidity, I couldn’t tell you how much, but probably only a tablespoon or two. It is very simple but oh so good! Using a crock pot on low setting for an hour or so just makes it better!
If you’re into seafood, I recommend this recipe; it’s my mom’s. It’s sweet because it uses ketchup. If your ketchup is not all that sweet, you can just add sugar or Splenda until it’s sweet enough for you. Disclaimer: My mom doesn’t really measure things when she gives me recipes; so these are my guesstimates.
Seafood Spaghetti

4 Tbsp. olive oil
1/3 of a medium onion, sliced
4 cloves garlic, minced or sliced thinly (more if you’re a garlic lover)
1 1/2 lbs. shrimp, scallops, mussels, squid rings (calamari), or any other seafood you like (weight without shells)
3 Tbsp. chicken boullion/consomme (this is a powder, not liquid)
ketchup (enough to cover the seafood)
2 green onions/scallions (chives may be substituted) – minced (optional for garnish)
Grated parmesan cheese (optional for garnish)
Enough cooked spaghetti for 4-6 people
Sauté the garlic and onion with the olive oil on medium heat until the onion has become translucent. You don’t want to brown the garlic, but it’s no big deal if you do.
Then add the seafood, boullion, and ketchup. Add enough ketchup to get to the consistency of spaghetti sauce that you like. Keep in mind the seafood will generate a little liquid as it cooks.
If the sauce gets too thick, you can add a little water. Too thin? Add more ketchup. Too bland? Add more boullion. Most importantly, taste, taste, taste until it tastes good to you.
Finally, serve by putting sauce on top of cooked spaghetti and sprinkling the minced green onions and parmesan cheese over the top.
Easy. Add to your mince a can of tomato soup,and a jar of favorite sauce,I like bolognaise or raguletto. You can add garlic and mixed herbs for more flavor. Also a pinch of bi carb soda to take the acid out of it then a teaspoon sugar. yumbo jumbo!
