I just scored a ton of tomato juice at a great price! Does anyone have any recipes they have that uses tomato juice? Its Campbells Tomato Juice if that helps. Thanks in advance!!

Some tomatoes are sweeter than others, depending on their ripeness and the variety of tomato. Use the ripest tomatoes you can. Added sugar will balance the natural acidity of the tomatoes, use more or less to taste. Tabasco hot sauce is also to taste, depending on your desired level of spiciness.
Ingredients
3 pounds very ripe garden tomatoes, cored, roughly chopped
1 1/4 cups chopped celery with leaves
1/3 cup chopped onion
2 Tbsp sugar (to taste)
1 teaspoon salt
Pinch black pepper
A couple shakes of Tabasco sauce, about 6-8 drops (to taste)
Method
1 Put all ingredients into a large non-reactive pot (use stainless steel, not aluminum). Bring to a simmer and cook, uncovered, until mixture is completely soupy, about 25 minutes.
2 Force mixture through a sieve, chinoise, or food mill. Cool completely.
Store covered and chilled. Will last for about 1 week in the refrigerator.
Yield: Makes about 1 quart.

OVEN BEEF STEW
2 pounds beef stew cubes
1 (32 ounce) can tomato juice or V-8 cocktail
3 cloves garlic, crushed
1 onion, sliced
1 stalk celery, sliced
1/4 teaspoon oregano
1 beef bouillon cube (optional)
3 or 4 carrots, sliced
4 or 5 potatoes, cubed
1 tablespoon flour
1 tablespoon sugar (optional)
1 1/2 tsp. salt
1/2 teaspoon black pepper
Preheat oven to 250° F.
In a casserole dish, blend salt and pepper, sugar (optional), oregano, flour and one crushed beef bouillon cube (optional).
Stir in tomato juice, mixing well to combine. Add remaining ingredients.
Cover and bake about four hours.
If using a slow cooker, which also works well for this dish, set your timer for six to eight hours on the medium setting.

1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon sugar
Directions:
1 Combine first 6 ingredients into Dutch oven, bring to a boil.
2 Reduce heat.
3 Cover and simmer 30 minutes.
4 Remove from heat.
5 Put vegetable mixture through a food mill or sieve.
6 Stir in salt, paprika and sugar.
7 Chill thoroughly.
8 Serve over ice if desired.
