Question by Sarah P: Anyone know exactly how to can oven-dried tomatoes?
Does anyone know of any recipes or just how to can oven-dried tomatoes? And if you need a pressure canner? My mom found a recipe for it once but we can’t find one anymore. Some please help us!! Thanks!

Chopped sun-dried tomatoes (marinated in olive oil) and white wine added to the garlic, slightly reduced.

I like to: Preheat oven to 100 degrees Celsius
Quarter whole Roma tomatoes. Pour onto a metal tray enough rock-salt to lay your tomatoes on.
Place in oven and roast for a few hours or until dehydrated but not too colored.
These are nice tossed through olive oil, pressed garlic and chopped basil.
