  2. Eveerything goes with fried green tomatoes. All entrees as wellas the usual potatos and othere vegies. What time is dinner?

  3. Fried green tomatoes are usually served as side dish. They are great with fried, broiled, roasted or blackened chicken, fried or blackened cat fish or blackened steak, shrimp etouffee or shrimp creole.

Edit: Most off the shelf blackened seasoning mix contain a lot of salt. I make my own and keep the extra in a jar.

    Blackened Seasoning Mix
    2 teaspoons ground paprika
    4 teaspoons dried leaf thyme
    2 teaspoons onion powder
    2 teaspoons garlic powder
    1 teaspoon granulated sugar
    1/2 teaspoons salt
    2 teaspoons black pepper
1 teaspoon ground ancho chili powder or cayenne pepper, or to your taste
    1 teaspoon dried leaf oregano
    3/4 teaspoon ground cumin
    1/4 teaspoon ground nutmeg
    Preparation:
Place all ingredients in a jar and store in a cool dark place. Shake jar well before each use.

For Blackened Chicken Breasts, Fish or Steak
Over low heat, melt about 3 tablespoon of butter in a nonstick skillet (enough butter to cover fish, chicken or steak and the bottom of the pan). As soon as the butter is melted, place the fish in the pan, flipping it over to cover both sides with butter. Then generously coat the fish with the seasoning, flip over again and coat the other side with seasoning.
Now turn up the heat to medium-high and cook on one side until blackened and somewhat crispy. Flip over and cook the other side. Add a little more butter whenever necessary.

If you want a vegetarian meal, serve these rice and beans with fried green tomatoes.

    Southern Style Rice and Beans
    Ingredients

1 1/2 tablespoons of extra virgin olive oil
1 large yellow onion, finely chopped
    2 – 3 cloves garlic, minced
1 large green bell pepper, coarsely chopped
1 cup long grain white or brown rice
    2 cups of crushed tomatoes
About 1/3 of an 8 oz. pkg. of baby bella sliced mushrooms
    2 cups of water
1/8 – 1/4 teaspoon ground red pepper (Cayenne)
    1/4 teaspoon sea salt
1 teaspoon dried marjoram, crumbled fine
    1 teaspoon of smoked paprika
1 can (15 oz.) red kidney beans, drained and rinsed
1 1/2 cups of frozen green peas, thawed and drained
8 oz. of kale, coarsely chopped or shredded

    How we make it

Heat the olive oil in a large saucepan or skillet, over medium heat.
Add the garlic and onion and saute for about 5 minutes or until tender.
Add the green pepper and continue to saute for another 3 minutes. Stir occasionally.
Add the rice to the saucepan and mix thoroughly. Then add the water and mix again. Bring to a boil then reduce the heat to a low simmer, cover and allow to cook for 5 minutes.
Add the tomatoes, salt, Cayenne pepper, paprika and marjoram. Stir to mix well. Keep covered and allow to cook for another 12 to 14 minutes, or until the rice is somewhat tender.
Stir in the peas, kale and beans, return to cover and cook for another 5 to 8 minutes or until the rice is tender and the vegetables are heated through.
    Serves 4.

Freshly baked cornbread or muffins make a nice addition to any meal.

  5. When I get a bunch of green tomatoes, I fry them up and make a meal from just the fried green tomatoes, but, that’s just me.
They can be served with just about anything you want to have as your main: chicken, steak, meatloaf, pork chops, whatever suits your fancy.

  6. Pork chops, mashed potatoes and gravy, and butter beans. Slice a small onion and toss it in with the tomatoes.
