811 Diet- Sweet Corn and Cherry Tomato Salad

Question by Weezy J: I just made a super delicious killer huge batch of salsa. Can I freeze it?
I want to give some to folks I won’t see till Tuesday. It is so good, if I do say so myself. lots of fresh basil, roma tomatoes, sweet onion , jalepeno, garlic and the secret spice… curry powder!! yum!

  5. Yes you can freeze it, just remember that when it thaws the veggies will not be as firm as they are now. The ice crystals that form when freezing will break down the structure of the veggies when they thaw. It shouldn’t change the taste, it will make the salsa a little more watery due to ice crystals forming. Salsa last a long time in the refrigerator. Today is Friday & you are seeing your friends on Tuesday…. I don’t see the need to freeze, just put in air tight container & refrigerate.

  6. actually there should be no need to freeze the salsa. as long as there is vinegar in it, the salsa should keep for a couple of weeks in the refrigerator. put it in an air tight container, and pour a layer of olive oil to cover the entire surface.

    tomatoes don’t freeze well (it totally messes with the texture once thawed) and the flavor of your spices & herbs will be diminished by freezing, so it won’t taste as “killer” as it did fresh.

  8. Yes you can freeze it for a few months, jsut let it sit in the fridge to defrost (not the Microwave).
