Question by Murray: Using tomatoes in bean soup?
I made soup once with dry beans which I soaked. The soup called for tomatoes. It cooked for hours and hours and hours and hours and the beans never got soft. My sister who is a chef said that the acid in the tomatoes may inhibit the softening of the beans. This time, I’m using canned beans and diced tomatoes. I’d rather not put them in at the end if I can help it. I’ve noticed that many bean soup recipes use tomatoes. What’s the deal? Thanks.

Sis is right. Salt will do the same thing with dried beans. You have to soak and cook them prior to putting them in the soup. You won’t have the same issues with canned beans because they are already cooked.
I love the cheaper price of dried beans but they are a pain in the butt to cook!

Make sure the beans are cooked and softened first, before you add other ingredients.
Red beans, ( most dried beans in fact) need soaking overnight and cooking before use.
A little baking soda in the water may help.
Tomatoes slows down the cooking process, tomatoes also tenderizes.when using dried beans put the tomatoes in after they have softened then continue simmering.Canned beans are already cooked you can combine the beans and tomatoes right away if you wish..timing certain ingredients when cooking is very important., some ingredients need to be added at certain times during the cooking process like adding tomatoes or even vegetables like potatoes which can overcook and disintegrate Adding things like wine to stews and also flavorings at the end like vanilla to ensure the flavor comes thur timing is very important I never soak my beans,no need but do sort them and wash well in cold water then cover with water (no salt at this time, can toughen beans ) and simmer for at least a good hour or more before adding other ingredients

Make it firts without tomatoes than the last five mins add tomatoes. I do not use tomatoes. I use white beans canned or dry, grated onion, carrots, garlic. Add bacon bits, ham bullion (4 packs). Add 1/4 cup witsheshire, and 3 tbsp dry mustard. Let that simmer two hours and wala!
