    just make sauce and strain
    there are many italian sauces

  19. The best and easiest- chop 3 tomatoes, add 1/2 cup chopped basil, 1 tsp salt, 1 tsp pepper, 1/8 cup olive oil, 1 tbs balsalmic vinegar and 1/2 pound chunked or diced mozzarella cheese. Let sit while you cook some spagetti and add hte hot pasta to the sauce. Serve. Take advantage of your garden, this is awesome.

    Or make a more traditional sauce;

    tomato Sauce;
    3/4 cup chopped onion
    2 cloves garlic, crushed and minced
    3 tablespoons olive oil
    6 fresh, peeled tomatoes
    3/4 cup dry red wine
    1/4 cup shredded carrots
    1/4 cup chopped fresh parsley
    1/3 cup chopped fresh basil
    1 teaspoon sugar
    1 teaspoon salt
    1 cup sliced zucchini
    1 cup sliced fresh mushrooms

    Heat olive oil in Dutch oven over medium heat; add onion, cooking until tender. Stir in garlic, tomatoes, wine, carrots, parsley, basil, sugar, and salt. Bring sauce to a boil. Reduce heat and simmer, uncovered, for 1 hour, stirring frequently.
    Add sliced zucchini and mushrooms; cook until sauce is thick, about 20 minutes longer

  21. This is my favorite way to use my crop:

    In a large bowl combine:

    4-5 large Tomatoes, seeded& chopped ( i usually put 2 of them through the medium side of a box grater and chop the other 2 or 3)
    1 small onion, minced
    2 cloves of garlic, pressed or finely minced
    1 bunch of basil, julienned
    handful of parsley, chopped
    1/2 tsp Kosher or Sea Salt
    1 tsp fresh ground pepper
    1/4 tsp Crushed Red Pepper flakes
    Juice of 1 lemon
    2 Tbs. Extra Virgin Olive Oil
    1/2 lb best Quality Mozzarella, 1/4 inch dice (optional)
    Stir to combine, let sit for 10 mins. @ room temp.

    Cook 1 lb. of pasta of your choice.Drain and immediately dump on top of tomato mixture, toss to combine & Serve with some good bread, fresh Romano on the side & a bottle of Chianti!

    I like to serve grilled Sausage or chicken along side as well.
