Question by MB: How do you make pasta sauce from scratch?
I have about 10 fresh tomatoes, and I want to make a sauce with them. Do I peel the skin off? How do I go about this?

to peel tomatoes: drop them in boiling water a handful at a time for 1 min. then remove into ice water to shock. the skins should slip off easy. You could seed them now or leave the seeds. use a blender to puree the tomatoes. cook them until they reduce to the thickness you like. Use italian seasonings for flavor.- basil, thyme, rosemary, parsley. red pepperflakes.
Beef stock or base adds great flavor too. a little wine can be great too.

    Now, you can either chop or puree the tomatoes. You will need some Italian seasoning like these: http://frugalliving.about.com/od/foodsavings/r/Italian_Season.htm

    From there, you can add (cooked) meat like ground sausage or ground beef. And you can also add vegetables like onions, peppers and mushrooms (as the most common) and garlic.

    You’ll need to simmer all of this for an hour or two. I find sauce like this is best the day after leaving it in the fridge over night.
