Question by Elsie F: How to thicken up a tomato based pasta sauce?
I’ve made a pasta sauce for dinner tonight. The sauce is made of two tins of chopped tomatoes,1/4 tin of water, one red onion, 2 gloves of garlic, 300g of peas and two large carrots diced up.
However, its really runny and not as thick as I want it to be as I added a little too much water. I want it to be thicker so it stick to the pasta and not side off to the bottom of the plate, otherwise I’m going to struggle to get one of my daughters to eat it

Add a small cooked potato – make sure it is falling to pieces. That should absorb some of the liquid, or you could add a little flour.

  2. mix about 2 tablespoons of cornstarch with and then mix it in the sauce.

  4. Let it simmer for awhile to evaporate the water.

    Or, ladle 1/2 cup of sauce into a small bowl. Set it in the fridge to cool. When it’s completely cool, stir in 2 tablespoons corn starch and mix thoroughly. Add that to the sauce and stir well. Let the sauce simmer 5 minutes longer.

Mix a bit starch powder with water stir it into the sauce and cook it for 5 minutes otherwise it will taste of starch.Add some tomato paste or spices if needed.Usually you can thicken a sauce simply by reducing it (cooking until the superfluos fluid steams off) but I wouldn’t do that if I had already added the peas.
