Question by goo_ie: can I freeze green tomatoes for frying later if so how do I prepare?
I have seen green tomatoes in the grocery and wonder if I can do this at home. We have a garden and I love fried green tomatoes.

Green Tomatoes
Preparation – Select firm, sound green tomatoes. Wash, core, and slice 1/4-inch thick.

For Frying – Pack the slices into containers with freezer wrap between the slices. Leave 1/2-inch headspace. Seal and freeze.

I have been doing this for years and have great results…..wash and remove stem end, dry well, slice to your desired thickness, place on a cookie sheet (freeze in a single layer, after they are frozen remove to air tight plastic bags or containers and place back in freezer. To cook, defrost and continue with your recipe…..
    Sometimes, I go ahead and dip in milk and egg mixture and then my breading or flour mixture and then back into the milk and egg mixture and then the dry mixture…..slightly brown on both sides (do not cook all the way done but only slight;ly brown) drain on paper towels and freeze in single layer, when frozen remove to air tight bags or containers……to cook remove from freezer and place frozen in preheated oil…..

  2. The problem with freezing tomatos is that when you freeze the water expands, which tears the tomatos slightly, and when they defrost the water leaves the tomatos to leave a soggy watery mess. When they freeze them in the grocery store they quick-freeze them, which minimalizes the water molecule expansion. You can still freeze them, but they wont fry up as well, especially if you are using a batter. Unless you have any liquid nitrogen lying around, I would advice against it.
