Question by Dakota: Why do some recipes call for a combination of crushed tomatoes and tomato sauce?
I’ve recently been researching recipes for different types of tomato sauces (Spaghetti, pizza etc.) and I’ve noticed that many of them call for both types even though the end result is a smooth sauce. I can understand using whole or crushed tomatoes when the object is to have a chunky sauce. I don’t like whole tomatoes, but I do like pretty much any type of processed tomatoes (paste, sauce, ketchup), so I’ve never used them in a recipe. My curiosity is getting the better of me.

crushed tomatoes are usually just canned in water so when you are making “sauce” you have to add the tomato “sauce” to make your “sauce”. Sorry if I’m over emphasizing the word sauce but that’s the key point to your question.
I beg to differ on your comment about the end results being a smooth sauce as they are not. try making your recipe with only sauce and no crushed tomatoes and you will see the difference.

  26. May be to do with the water content. If you want a smooth non-watery sauce, you have to cook some of the water out of canned tomatoes. Using sauce or paste thickens the sauce without the need for extra cooking.

You need the crushed tomatoes for the texture and the flavor, and the sauce for added “body.” I make a great marinara sauce using my home canned tomato sauce, which is peeled, cooked whole tomatoes which have been relieved of their skins and seeds, sieved and simmered until the volume is reduced by evaporation. Then I add sauteed vegetables (peppers, onions and garlic, or grated carrots, onions and garlic) and tomato slices which I have oven roasted with olive oil, salt and pepper. You can’t get that sort of complex flavor with just a can of tomatoes.

    Obviously, your taste buds are not refined enough.
    So just buy spaghetti sauce in the can or bottle.
