Question by T: Any good recipes for really good Taco Salad?
I’m very new to cooking (the best I can make is something like hamburger helper). I’m looking for a very good recipe for Taco Salad and also, this would be for one person and if I have left overs, where one person can eat it within 3 – 4 days.

I start by pu,rchasing extra lean ground beef or ground turkey. Then I season with Trader Joes’ taco seasoning mix. I prefer it because it doesn’t have any artificial flavors or preservatives and has a little kick to it. Then I purchase some Tostito’s with a touch of lime, some Pace Picante Sauce, baby lettuce, Spicy Ranch Dressing, shredded Mexican Cheese, and avocado. Layer as follows: lettuce, meat, picante sauce or chopped tomatos, dressing and tostitos. Garnish with avocado. Yummers!

    Taco Salad….for one
    1/2 cup shredded lettuce
    small bag of taco chips, crushed
    1 small tomato, cut up (Roma or cherry)
    1 green onion, diced
    3 oz. ground beef, browned and chilled
    1/2 cup kidney beans, drained (1/2 of small can)
    1/4 cup shredded cheddar cheese
    salad dressing (recipe below)

    SALAD DRESSING
    1/4 cup mayonnaise
    1 TBS. catsup
    1 tsp. taco seasoning
    1 tsp. taco sauce
    1/8 tsp. chili powder

    4 flour tortillas (8 inch)
    1 lb. ground beef
    1 pkt. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix
    4 cups shredded lettuce
    1 cup KRAFT Mexican Style Finely Shredded Four Cheese
    1 large tomato, chopped
    1/4 cup KRAFT Classic Ranch Dressing

    Preparation:
    HEAT oven to 425°F.

    CRUMPLE 4 large sheets of foil to make 4 (3-inch) balls; place on baking sheet. Place 1 tortilla over each ball; spray with cooking spray. Bake 6 to 8 min. or until tortillas are golden brown. (Tortillas will drape over balls to form shells as they bake.)

    MEANWHILE, cook meat with taco seasoning mix as directed on package.

    FILL shells with lettuce, meat mixture, cheese and tomatoes just before serving. Drizzle with dressing.

  3. Since you know how to make a hamburger mixed meal, use steak in this dish instead of ground beef to help increase your cooking skills. Marinate a small flank steak (a pound or less) in a tangy salad dressing for a couple of hours or more. In a large nonstick skillet, cook the steak on both sides until golden brown and then slice it no more than ¼-inch thick. Set this aside and cut a small red pepper into small squares and add it to a bowl. Add shredded lettuce, sliced half avocado, ½ cup black beans and 1 finely chopped tomato. Add some of the steak and then transfer all to a taco shell or a taco lettuce bowl. Top with Cheddar cheese and season with a Mexican spice. Drizzle lightly with a favorite dressing and serve.
