Question by May25th08: So, I ALWAYS find myself making pasta for dinner. Any suggestions for something else?
The thing is, pasta is so easy and cheap to make no matter what form I make it in. So I need some other recipes that are cheap and easy to make. Any help?

  6. Try semonlina the proper stuff from Italy. Its so versatile that you wont ever run out of ideas for it. You could also try stuffed peppers with rice.

  7. Have you tried noodles? Udon are the best. After you heat up your broth, throw in the veggies, (soy) meat, and spices. Then, turn off the heat, toss them in, stir and your dinner is ready in about 1 minute.

  8. a big pot of baked potato soup less than $ 10. A 5 pound bag of potatoes peeled and cut into about 2 inch pieces, boil for about 15 minutes, drain water, add a can of chicken stock and a 16oz container of sour cream then mash up, salt and pepper to taste. garnish with shredded cheddar cheese and scallions or green onions. serve with garlic bread to dip in it.

  9. I’ve been there before–I used to survive on pasta and cookies. :(

    Now, I’m still on a budget and limited time, but I’ve found some better ways to fill my stomach. If your time is limited, I suggest cooking on the weekend and refrigerating or freezing the extras to be reheated during the week. I’ve recently fallen in love with Mexican (or Tex-Mex) food, and that’s why I suggest you make a hearty and delicious caldo de res (veggie soup with a little meat—you can buy cheap cuts, too). The recipe I made and loved was found on allrecipes.com and I linked to it below.

    Also, beans are a great way to get some protein and fill you up. I suggest buying dry pinto beans (cheaper than in a can), soaking them overnight, covering and then boiling them for a couple of hours (2-3 hours). Add some salt and add water as necessary. You’ll know they’re done when you try a bean and it’s soft. And a little extra liquid in the pot is not a bad thing. Look up recipes for beans and try a few different dishes. I love to blend the beans in a food processor and make “refried” beans in a pan with bacon grease.

    Buy yourself some soft corn tortillas and you can use those refried beans and your choice of veggies to make a healthy, delicious taco (or use beans, egg, and bacon for a breakfast taco).

    Or fry the tortilla so that it is flat and hard. Spread the beans on top and add cheese and veggies and you’ve got homemade chalupas (my favorite food). If you’re feeling like a not-so-healthy snack, tear the tortillas into quarters, fry them up and salt them for homemade tortilla chips (the best you’ve ever tasted–I promise).

    Avocados aren’t cheap, but they are really good for you and they are pretty filling. Cut them up and toss them with chopped tomato, balsamic vinegar, olive oil, salt and pepper. It’s a great, filling salad.
