Question by W J: What does “tomato sauce” mean to in an American recipe?
In the UK tomato sauce usually refers to ketchup although it can refer to a number of sauces.

What would “one can of tomato sauce” refer to?

I assume that as the type of sauce wasn’t specified Americans would immediately now what it means.

tomato sauce here is simply cooked tomato pulp with no skins or seeds, it comes in a can in the grocery, or you can prepare it yourself. It is prepared from fresh tomatoes, skinned and seeded. Usually squashed or pureed, and cooked down until about the thickness of runny ketchup. Tomato paste is the same thing, cooked down till it is about twice the thickness of ketchup.

Ketchup has added ingredients that substantially change the flavor of sauces, like corn syrup, vinegar, salt, onion powder, and other spices. Tomato sauce may include salt.

  3. Can on the grocery shelf says “Tomato Sauce”. It is runny like soup – not like tomato paste which is thick like cookie dough. The normal size can would be 15 ounces. A small can is 7-8 ounces.
