Question by roxybeach793: Halloween inspired / or fun RECIPES involving TOMATOES?!!?
We are having our monthly get together party and this time our main ingredient is TOMATOES!

since it’s october i was wondering if there were any Halloewen inspired tomatoe recipes out there?!

thanks in advance!

if not…then what is an AMAZING tomato dish that would guarentee a success at a party~!

  2. Apple Cake

    Ingredients
    1 1/4 cups white sugar
    2 cups all-purpose flour
    2 teaspoons ground cinnamon
    2 teaspoons baking soda
    2 eggs
    1/2 cup vegetable oil
    2 teaspoons vanilla extract
    1 cup chopped walnuts
    5 1/2 cups chopped apples

    Directions
    1.Preheat oven to 325 degrees F (165 degrees C).
    2.In a medium bowl, stir together the sugar, flour, cinnamon, and baking soda. Add the eggs, oil and vanilla, mix well. Add the nuts and apple, mix until all of the apples are evenly coated. Pour into a 9×9 inch pan.
    3.Bake for 45 to 50 minutes in the preheated oven. Serve warm or cool.

    Pumpkin Bread

    Ingredients
    3 cups sugar
    1 cup vegetable oil
    4 eggs, lightly bean
    16 ounces canned unsweetened pumpkin
    3 1/2 cups flour
    2 teaspoons salt
    2 teaspoons baking soda
    1 teaspoon baking powder
    1 teaspoon nutmeg
    1 teaspoon allspice
    1 teaspoon cinnamon
    1/2 teaspoon cloves
    2/3 cup water

    Directions
    Preheat oven to 350 degrees. Butter and flour 2 9 by 5 loaf pans. Stir together sugar and oil. Stir in eggs and pumpkin. Combine dry ingredients in separate bowl. Blend dry ingredients and water into wet mixture, alternating. Divide batter between two loaf pans. Bake for 30 to 40 minutes or until cake tester comes out clean. Let stand 10 minutes. Remove from pans and cool.

  3. Umm, you could serve tomatoes in a bowl, cut the lights out and then tell people their a dead person’s guts. Then, go into a fake ghost story about a person that dies in your city.

  4. I LOVE tomato pie. This is a must try if you like tomatoes and cheese. I eat this a lot for meals by itself. By far one of my favorite tomato recipes.

    As far as Halloween recipes, I’m thinking tomatoes…blood. I’m brainstorming here. I know that Kraft has a lot of cute ideas. Of course, you can make a scary face on pizza with various ingredients. You could shape it like a jack o lantern or a bloody hand.

  6. Can’t think of anything Halloween themed but I have an entire tomato themed meal layed out for you. I hope you like these!

    **Menu**
    Main dish: Bruschetta Caprese Sandwiches with Red Pepper Tomato Soup
    Beverage: Blood Mary
    Dessert: Caramelized Tomato Cups

    *Bruschetta Caprese Sandwiches* (6 servings)
    -Take 3 tomatoes and finely dice them. In a large bowl, combine with 1/8 cup olive oil, 1 TBL balsamic vinegar, 2 gloves finely minced garlic, 1/4 tsp salt and 1/4 tsp pepper. Mix well and let set while you prepare the bread. Set oven to broil.
    -Set 12 slices of sour out and spread olive oil on one side of each piece. Set 6 of them oil side down on a cookie sheet. Layer the 6 pieces with the bruschetta, then 3 fresh basil leaves on each, and a a few pieces of fresh mozzarella. Top with other piece of bread, broil for 3 minutes or until golden, then flip, and broil other side for 2 minutes until golden. Yum!!! :) (You might try adding a few slices of bacon to these 😉 )

    *Red Pepper Tomato Soup* (6 servings)
    -Run three tomatoes through food processor, skins on, leaving them slightly lumpy.
    -Rinse, stem, seed, and half one whole red pepper. Broil the two halves cut side down until the skin is black. Allow to cool and then peel the skin and discard it, and add the peppers into the food processor. Blend, leaving slightly lumpy.
    -Take a 3-4 quart pot and add in one TBL olive oil. Set to low heat. Stir in one half of a diced white onion and one glove minced garlic. Once the onion is translucent, add in the pepper and tomato mixture. Stir frequently on medium heat until bubbling.
    Add in two cups of beef broth, a pinch of salt and a pinch of pepper. Allow to simmer for 15 minutes and serve with a dollop of sour cream on top! :)

    *Bloody Mary*(6 servings)
    -I would recommend you buy tomato juice for this one, as juicing enough tomatoes to reach your serving size will be quite time consuming and will take ALOT of tomatoes.
    -In a large bowl, mix 6 cups of juice with 4 TBL lemon juice,4 TBL Worcestershire sauce, one teaspoon salt, one teaspoon pepper, one teaspon of celery salt, and a splash of hot sauce. Add in 1 cup of vodka if you like.
    -Pour into glasses and garnish with a celery stick.

    *Caramelized Tomato Cups*
    -Combine 1/2 cup water and 2 cups sugar in a large skillet over medium heat. Allow to simmer.
    -Slice the top off of 6 tomatoes, and scoop the flesh into a colander over a bowl, leaving the tomato shell intact. Press the flesh against the colander to drain. Set the tomato tops aside.
    -Peel and dice three pears into small bite-sized pieces, placing them in a large bowl. Combine with this, 3 TBL slivered almonds, and a teaspoon of cinnamon.
    -Take one vanilla bean and split it lengthwise. Scoop the insides out and add it to the pears, then place the empty shell in your sugar mixture on the stove. (Stir this mixture frequently. You are making caramel!)
    -To the pears, add one teaspoon lemon juice, half a cup of orange juice, and the reserved juice from your tomatoes.
    -To your sugar and water mixture, once it thickens and turns brown, remove it from the heat and add in 2 cups of orange juice. Return it to the heat and stir until the orange juice is combined with it, on a low simmer. Remove from heat once combined and remove vanilla pod and discard it.
    -Stuff your tomato shells with your pear mixture, using up all of the mixture. The tomatoes will overflow a little. Spoon caramel sauce into each.
    -Top your tomatoes with the reserved tomato tops. Place a small layer of caramel in a baking pan and set your tomato cups in it, then top it with the rest of your caramel.
    *TIP* You can make these ahead of time to this point and refrigerate them for convenience!
    -Preheat oven to 350 and bake your cups for ten minutes. Baste with caramel and cook another fifteen minutes, then serve warm with vanilla icecream.
