Question by fridayfrancis: Vegetarian recipe that I can make with these ingredients?
My mother hates going to the grocery store, and I suck at cooking.

We have a bag of potatoes, (which tend to be the only things I can cook without burning) olive/vegetable oil, rice milk, (I’m lactose intolerant) a ton of tomato paste, pasta, soy sauce, vegetables, and bread.

I must also emphasize that I suck at cooking.

Bake some potatoes, and then make a stir-fry using the vegetables and soy sauce, put the stir-fry over the split open baked potatoes.

  1. boil the potatoes, then cut them up into “circles”, put olive oil (2 tablespoons or less) on a pan (you could use pam spray or any other oil spray), put salt and pepper on the potatoes and “fry” them.

    as for the bread, if you have garlic, crush it and mix it with butter, put this on ur bread and you will have garlic bread

    as for the pasta, you could boil it and add the tomato paste, vegetables, and spices like salt, pepper, and other stuff to add flavor to it.

    Pasta Con Broccoli

    4 ounces dry fettuccine pasta
    1 cup heavy whipping cream
    2 tablespoons butter
    1 ounce tomato sauce
    1/2 teaspoon minced garlic
    1/2 cup broccoli florets
    1/4 cup fresh sliced mushrooms
    salt to taste
    ground black pepper to taste
    2 tablespoons grated
    Parmesan cheese

    Directions:
    1. Cook fettuccini in a large pot of boiling salted water until “almost” done. Drain, and return noodles to pot.
    2. Stir cream, butter or margarine, tomato sauce, garlic, and broccoli into the noodles. Simmer until noodles are done. Stir in sliced mushrooms, and remove from heat. Sprinkle with Parmesan cheese, and season with salt and pepper to taste.

  3. You can make a tasty potato curry. Here’s the recipe:
    1) Cook the potatoes ( place the potatoes in boiling water, about 6-7 should be fine).) & once they are cooked & warm enough to handle you can chop them into cubes

    .2) Also chop 2-3 cloves of garlic & 1 large onion into small cubes.

    3) Heat about 1-2 tsps of oil in a pan. Once the oil is hot add in some herbs ( mint, cilantro) whatever u have. Give it a 1-2 sec toss. Add in a few cayenne pepper flakes (depends on how hot u want it) . Give all these another 2-3 sec toss.
    4) Now add in the chopped garlic & onion. Cook until the onion pieces are transparent.
    5) Once the onion pieces become transparent add in the tomato paste, about 4-6 teaspoons.
    6) At this point u can add salt & pepper
    7) Cook until the tomato paste blends in with the rest of the ingredients.
    8) Now add in the chopped potatoes. Also at this stage u can check if u want to add more salt or pepper, u can add now.
    9) Mix everything well. Toss it around for about 5-10 mins.
    10) Switch off the gas & enjoy!
    Note: Cook this recipe on medium flame.

    or make a simple sandwich:
    1) Toast the bread
    2) Add in the tomato paste on to the toasted bread. Add pepper to ur taste.
    3) Now add in a slice of cucumber & a slice of onion, some greens like lettuce if u have them around
    4) Make it like a sandwich & enjoy!

  4. 1) Boil the water with a pinch of salt and little oil
    2) When the water is boiling add the pasta and cook for 7 minutes.
    3) Drain the water and keep the pasta aside, do not cover.

    4) In a pan, heat a table spoon of butter/ oil and saute onions and spinach (if you have them at home) Or saute veggies that go with pasta like broccoli etc.,

    5) Then add about half a teaspoon of salt (keep the flame low), Tabasco or paprika or freshly ground black pepper (about a pinch)

    6) Add nicely chopped (diced) tomatoes and fry until all of it softens. Takes about 10 minutes, keep the flame low.

    7) Add some milk/ cream and bring the paste to boil.

    8) Add cooked pasta and grated cheese and cook for another 5 minutes.

    If you dont like the above,

    1) Bake the potatoes (2) and peel off the skin. Mash it nicely.

    while the potatoes are cooking, start the following:
    2) heat a tablespoon of oil.
    3) Add diced onions and fry adding a pinch of salt until it is transparent
    4) Add nicely chopped chillie (1)
    5) Add diced tomatoes and fry until it softens keep this mixture aside.
    6) Add the mashed potatoes to the above and mix well; Add little lime if you have at home.

    7) Toast the bread with butter on both sides and use the above for sandwich.

    You may have these with omelet or with boiled veggies sauteed in butter.
