Question by ₦âħíмânầ»€G: I lost my Mother’s spaghetti sauce recipe and want to know if anyone has a spicy sauce recipe.?
She used Tomato paste and soup with French’s spices. I can’t find the right spices now and I hate bottled sauces.

I use tomato paste based sauce. I add basil, oregano, salt, coarse ground pepper, fresh cut up garlic and a few dashes of Louisiana hot sauce for some spice. I cook those spices with the meat in good olive oil before adding my paste. A couple hours before it is done I add a cup of red wine. And an hour before done, I grate in some pecorino romano. My sauce cooks about 6 hrs total.

    here goes
    Pasta Alfonso (dedicated in memory of the great sandal wearing hippie veggie mr Fons Janssen)

    sauce.
    fresh sundried tomatoes
    tomato sauce
    1-1.5 bottles of wine.
    herbs basil, oregano, marjoram, bay leaves, thyme, … as your taste dictates
    garlic and onion (again to your liking)
    soak the tomatoes in stock overnight and start by chopping onions and garlic.
    heat olive oil in a pan and brown the garlic and onions
    add a good sip of wine and add the tomatoes and stock. bring to boil and let boil for 5 minutes. then lower the heat to simmer and add the herbs. leave to simmer for 2 hours and just add some wine and tomato sauce every few. (i use between 1 and 1.5 bottles of wine. after 1.5 hours into the boiling start your veggies.

    I use the following combo but feel free to use whatever you fancy.
    mushrooms(preferably not the magic kind)
    eggplant
    peppers (the large non spicy kind)
    carrots
    green celery
    again onion and garlic
    chop coarsely and heat a big pan. brown onions and garlic and add the veggies and sprinkle with herbs. heat the veggies till still slightly crude
    throw the veggies in the sauce and allow to sit in for 5-10 more minutes
    lovely stuff
