Spinach sorta throws it off. Try green beans, mushrooom rice pilaf or cauliflower as a side dish.

  1. She didnt show how to make the sandwich- lame. What I do is get a baguette, slice it in half and put the roasted tomatoes and some mozzarella on top, then toast it till the chesse melts. Oila!

  2. this isnt correct
shes ment to remove the pips and juice
(which can be strained to prodcue a delicious intense clear tomato juice)
the tomatos she produces out of the oven have the juice and pips removed so she’s cheated somewhere in the middle.

  3. For the most part, the flavors go together well. Don’t but too much breading on the chicken. Other sides could be bread, a salad, or soup. here are a couple recipes below.

  4. I think you might have a hard time not overcooking the spinach if you are serving it mixed in with the pasta and chicken, so be careful! Add it in the last 2 minutes of cooking and you should be good. If you can’t do that use green beans or asparagus instead. It will be harder to overcook. You could also do broccoli.
I would also make some sort of creamy sauce to go with this.

  5. Lemon flavored meat and sun-dried tomatoes do not go together. I suggest you keep the chicken and serve it with a spinach salad (spinach, sliced strawberries, walnuts with a light vinagrette) and bread sticks on the side.

  6. The combination of lemon chicken, pasta, sun-dried tomatoes sound fine.
If possible I would leave out the bread coating on the chicken.
Buy chicken breasts with skins on, saute them seasoning as they cook, then finish in the oven until nice brown and the juices run clear. Squeeze on some fresh lemon juice on them in the last 2-3 minutes of cooking. Separately cook you pasta (maybe spaghetti). Drain well turn the heat low and add the soft sun-dried tomatoes, baby or torn spinach leaves and finish with a little crack black pepper and a dollop of sour cream (creme fraiche).

  7. maybe add a side salad or broccoli and a dessert

  8. This sounds like a delicious meal and I think the flavors will compliment each other very well. There isn’t anything you need to add to the meal. There are plenty of nutrients from the different vegetables as well as a protein and grain source (pasta) so you have the major food groups. For dessert, you could make something with fruit in it to really complete the meal. Perhaps a cake with a fruit filling or simply a fruit salad with some yogurt and granola. I wish I was coming to your house for dinner!
