Question by pissedmomma: What kind of a salad would go well with jerk chicken?
I want an easy meal to serve to a few guests after appetizers. I’m going for chicken, bread and a salad. All salad suggestions welcome!

some type of slaw, look up recipes for apple slaw with red cabbage.

potato salad, or mac salad would be good too.

or since jerk chicken is messy something without much dressing would complement it well, maybe just spinach with sliced almonds and sliced mandarin oranges

  1. Greek salad: Chunks of Romaine, black olives, cherry tomatoes, tons of diced cucumbers and loaded with crumbled feta cheese.

  2. A simple cucumber salad is nice. Slice cucumbers and radishes extremely thin (if you have a mandoline or food processor this is faster/easier). Add some tomatoes, and thin sliced red onion. Balsamic vinaigrette (or a homemade vinaigrette). Top with crumbled feta (optional). And fresh or dried dill.
    Black beans and saffron rice are also yummy & easy sides that accompany jerk chicken nicely. And if you can find the Hawaiian bread rolls, and make some pineapple butter on the side.

  3. You should serve a crispy salad. This is one of our favorites.

    1 pk frozen veggies(peas,Lima’s.corn)
    1 pk fully cooked microwavable bacon
    1 pk shredded ice burg lettuce
    2 med. tomatoes
    1 med sliced cucumber
    1 red bell pepper
    1 bottle Kraft Tangy Bacon n Tomato Dressing

    Marinate frozen veggies,bell pepper and cucumber in the dressing for 4 or more hours
    Microwave bacon then crumble
    Build the salad on top of the shredded lettuce
    Toss together the marinated veggies
    Layer your ingredients starting with the tossed marinated veggies
    Top the salad off with the bacon and tomatoes
    We like to serve sliced garlic bread with this salad rather than crackers.

  4. Tabouleh. Russian salad spanish style. (potatoes, beets, greenbeans, boiled eggs, mayo…)
    cabbage and shredded beat salad. Don’t serve casear salad.
